The handmade tortilla on the steak quesadilla was spectacular. Seriously, the masa alone was worth the visit. It was fresh, flavorful, and had that texture you only get when someone actually knows what they're doing with a tortilla. I ordered the goat super burrito without rice. Normally, when I hear "super," I expect sour cream and guacamole, but mine didn't come with either. What it did have, however, was what seemed like double the meat. And I'm certainly not going to complain about that. The goat was beautifully stewed, tender, flavorful, and incredibly fresh. Actually, everything here tastes fresh. And that's because it is. Everything is made from scratch, and you can taste the difference. It took about 15-20 minutes from ordering to getting my food, which is completely reasonable considering everything is being prepared fresh, on the spot. There was no one else in the restaurant when I ordered, but that clearly doesn't mean this place isn't busy. It was Friday, and there was a steady stream of people coming through to pick up bakery orders. Everything in the bakery case looked amazing, and judging by the number of people coming in, I wasn't the only one who knew it. I'm just a little sad with my visit, because you can't really see into the kitchen. So I didn't get to watch the woman making the masa, mixing it between her hands with that effortless rhythm that makes you wonder how many years, or generations, it took to learn. A rhythm taught to her by her mother, who learned it from hers. Then watching her fold, shape, and press that masa would be like watching history become dinner. There was generations of tradition, technique, and love layered into something you get to hold in your hands and eat. This space is immaculate and it has soul and sol. My only reason for not giving it five stars is that everything is to-go. I really wanted to sit down and enjoy this meal right there instead of taking it with me. With food this good, handmade, and fresh, I would absolutely love to have a place to sit and savor it. Great food, handmade from scratch, generous portions, and a bakery that clearly deserves further investigation. This isn't just a place making food. It's a kitchen carrying something forward. And that's a pretty special thing.
