The shishito peppers were swimming in sauce, albeit the sauce is tasty, it was WAY too much. The ramen was 5 star, as always. It was disappointingly served in a chipped bowl, which is inexcusable to me. The kitchen should never serve food on or in a damaged dish. Throw it away. The table was sticky (maybe from a prior order of shishito peppers, lol) and I had to request and wait for it to be wiped down. The restroom was in need of attention and cleaning. Service was pleasant but not very attentive. Hostess was slow to seat me because she was chatting with coworkers. While the ramen (only) was outstanding, the rest of the experience was unpleasant. While I will be going again because the ramen is great, I really hope management looks at the change in attention to important matters and addresses accordingly.

Our server was attentive, provided us menus and the restaurant's decor created a cozy, welcoming atmosphere that transported me back to Okinawa Japan. After traveling abroad, it is especially refreshing to find authentic Japanese cuisine in the United States, and Hinodeya Ramen truly stands out in that regard. We ordered several katsu curry plates, bento boxes for the children, and started with an order of gyoza as an appetizer. The gyoza arrived crisp on the outside with a juicy filling that we demolished within minutes of being placed on the table. The katsu curry arrived as crispy cutlets paired with a thick, curry sauce that was rich and delicious. The chicken bento boxes contained a variety of vegetables, rice and their selection of proteins. Our meal was flavorful, and absolutely delicious. This establishment also brought back memories for my sister and me of our time serving abroad in Okinawa. The rich flavors, the spicy curry, and the authenticity of the cooking made it feel like a small return to Japan. Finding Japanese food that encompasses those flavors is not easy to find, but this restaurant truly delivered. I'm not sure if they're handmade from scratch, but they had the perfect thickness and chewiness. I also loved generous the portion of cha shu slices. Most other places only give you 1-2 thin slices, but that was not the case here. The pork was tender. The ajitama was solid too, although I prefer more of a soft-boiled egg. While the meat portion is more generous here, the tonkotsu didn't come with many vegetables. A lot of other ramen places I've been to will have corn, fried garlic, etc as default, but those are all additional cost add-ons here. The ramen was delicious without them though but just something to note. We also got the tomato ramen as it's the chef recommendation. The dish is very creative and the execution was great. Personally, I still prefer traditional ramens but it was certainly a nice culinary creation to try. Overall, I would definitely recommend this place and would come here again. Just be aware there may be a wait, and because they're so busy, you do have to proactively flag down staff. However, the staff are still really nice despite all the tasks they're juggling at once.

The noodles are on the skinnier side, which I prefer thicker, chewier noodles. The pork chashu serving was small, and it tasted kind of old and wasn't that tender nor flavorful. The broth was just alright. I prefer soft-boiled, jammy ramen eggs, but the ajitama here was cooked longer than I would've liked. Ironically, I thought the veggie ramen was *much* better. The broth had better flavor, and they use different noodles than the tonkotsu, which were thicker (and exactly what I like!). Lastly, we had the matcha tiramisu for dessert. I will say it is a little bit salty, with the garlic ones being more salty than the non garlic ones. However the garlic ones do have more flavor. There's not that much meat/protein either just one piece of meat and an egg. The could be slightly better but it's still good. It also just has bamboo shoots but nothing else. A very simple bowl. Ambiance is nice, it feels upscale but also homey at the same time. They have an open kitchen concept which I like.
