My mom is a hell of a chef and she was concerned because she was going to have knee replacement surgery the week before Thanksgiving, rendering her unable to cook for what must be the first time in 40 years. We looked at a lot of different options for Thanksgiving. Many were prohibitively or just stupidly expensive and others just looked bad. We took a chance and ordered the dark and light meat turkey, gravy, mashed potatoes, and stuffing from Chef Cordelia. Not only was the food pretty darn good (like really good), but their communication was excellent. They answered questions quickly and delivery was efficient. The turkey was not dried out, but flavorful and well cooked and the stuffing stole the show. The gravy tasted homemade as did the mashed potatoes. I almost don't want to post this review because it's like a well kept secret and once LA hears, I know that it'll be impossible to get again. She makes you feel like family the moment you meet her and she knows exactly what you want before you even speak. Now to talk about her food. We had a couple of supper club tastings and we knew food was so important for our wedding day. And they did not disappoint! Cordelia met with us during our final walk through at the Lodge and gave us good ideas for the signature cocktails and suggested which dishes & apps complimented each other. We decided on family style dining and they offered a wide range of menu options, which includes 4 passed appetizers, and mix and match between 5 dining items. For apps, we selected the bacon wrapped apricots (crowd favorite), mini crab cakes, chilled grilled shrimp w/gazpacho shot, and duck bao buns. The dining items were a watermelon and mixed greens salad, cedar plank salmon w/rosemary mustard glaze, tri tip w/charred tomato salsa, green beans w/almond slivers and street style corn on the cob. Our Thanksgiving dinner was made this year by Chef Cordelia and her team. At first I was sad about giving up our usual meal. But This was so outstanding, I'm tempted to make this a family tradition! (Plus, no work for me !) Every dish was out of this world. Moist and flavorful roast turkey with sourdough stuffing w mushrooms, apples celery and sage. Sweet potatoes with cinnamon orange maple glaze. Smoky Yukon gold mashed potatoes. Cornbread with honey butter. Green beans and caramelized onions. Bourbon pumpkin pie. My husband is a vegetarian and this was the only thing he wanted for the wedding. She made the most delicious impossible burger sliders that my meat eating relative scarfed down three before I broke the news to him that they were vegan. He ate two more and is still convinced I was lying to him. Bacon wrapped Apricots. I mean... come on. They are making me drool while I type this. The flavors were exquisite. Truth be told, when we first booked the Lodge at Malibou Lake as our wedding venue and were told that Chef Cordelia was the exclusive caterer, we were somewhat not keen at the idea of being locked in. But boy... we absolutely LOVE everything that come out of her brilliant mind and kitchen. Cordelia is a total sweetheart and really cares about the quality of the food served at the events she caters. She is also very accommodating in terms of dietary restrictions and coming up with new dishes based on what we like. Having gone to two tastings before deciding on the menu, we were more than confident that the food on our big day will be delicious. Our wedding day was perfect all around. Our guests raved about the food (something rarely heard of at weddings), in fact some are still talking about it weeks later. One of my friends liked the seared shrimp appetizer so much that she requested for the recipe from the chef! And of course, the chef was more than happy to share the joy :) Other big hits at our wedding were the cabbage 'tostaditas' appetizers, the sausage meatballs (a friend later told me that she must have eaten about a dozen of those), the flank steak with chimichurri, the mashed potatoes with smoked butter and the butternut squash raviolis (in short, basically everything). We actually took a risk with the raviolis since they were not served at either of the tastings we attended, but they turned out to be the greatest hit of the evening. One of the tables at our reception even held a mini ravioli eating contest to see who ate the most that night (because they are just that delicious!). There is even more to love about Chef Cordelia in that she also treats vendors extremely well. Our vendors had the chance to taste her amazing food and enjoyed the hospitality provided by the venue staff. We cannot recommend Chef Cordelia enough! Chef Cordelia offers a versatile menu that is customizable in whatever shape or form you need modifications. There isn't a single dish or appetizer I wish I hadn't chosen. If anything, I wish I had a plateful of it all right now! Rewind a little, and let me tell you about the tastings! The way Chef Cordelia has these "tastings" is so great! It's a dinner party vibe that takes you through the course of the night, similar to how your wedding guests might experience on your wedding night. You get to enjoy cocktails and appetizers and then are invited inside for dinner. Each month's tasting is done a bit differently so you can expect to go more than once and experience something slightly different than the last. Some crowd favorites (also my personal favorites) are: The miso bruleed salmon and the apricot wrapped in bacon (appetizer). Don't get my short list of two things wrong. Everything else on our menu was absolutely delicious, but these two things are BY FAR some of the most delicious foods I've ever consumed. EVER! After interviewing dozens of caterers while planning our wedding, we decided to hire Chef Cordelia and her staff. We were taken by her down-to-earth approach, her humor, her unflappable nature and her fried chicken. We hosted an outdoor wedding at Malibou Lake Mountain Club with 200 guests. It was an extensive and affair--more like a movie production than a wedding in many ways. We planned many layers of catering for the night, including a special welcome cocktail and appetizers before the ceremony, the amazing dinner, and a late night munchie service. Chef Cordelia and her outstanding staff worked tirelessly, never losing an ounce of their professionalism and warmth. In the years following our wedding so many of our guests have said it was the best food they have had a wedding - ever. And even taken out of context of comparing her food to notoriously bad wedding food - it was as good or better than many high end dining experience we have had. Seriously. Chef Cordelia made us feel special on our wedding day and she made the event custom tailored to us. We never had a sense that any thing she did was cookie cutter--rather it felt that she was making our event the most important in her career. Her staff even prepared a to-go box for us to take back to the hotel after the night was over. Chef Cordelia also made us feel confident. She was calm in the face of a huge feat, and executed it with style, grace, and deliciousness. We had such a great experience with her we have asked her to cater many other events since then. Baby showers, birthday parties, holidays. Yes, Chef Cordelia is the reason our friends turn up to our notoriously large Thanksgiving meal. Every meal she has prepared for us has been better than the next. Her innate ability to assess what we need and want is unparalleled. Can I give 6 stars?! Chef Cordelia is simply THE best. I've worked in event planning and catering for over a decade, and you simply will not find anyone who has the combination of skills, talents, and personality she does. I'll get to the food in a minute, but first you have to understand that most chefs and caterers are obnoxious. From the moment I met Chef Cordelia, she was kind, funny, and professional. She's laid back in a way that puts you at ease, but it's not because she doesn't care. She's just a pro! If you want her to take charge and plan everything for you, she will -- and she'll kill it. If you're specific about your event menu how you want things prepared, she'll work with you and be "real" about what is possible based on your event needs and kitchen capabilities. Last fall, she catered my wedding in Palm Springs. It was an intimate event at a private estate with 50 guests or so. Every single thing was on point. The passed hors d'oeuvres were incredible (2 hot, 2 cold) and the sit-down plater dinner not only looked amazing, but tasted incredible. I would cut off a finger if it meant that I could eat her gnocchi again. The chimichurri on her ribeye was equal parts fresh and delicious and she also made the most delicious roasted cauliflower (vegetarian option). On top of her easy and approachable demeanor and incredible food, she knows the importance of service and aesthetics. Her staff was present, engaged, and friendly (not always the case with cater-waiters (trust me)), and she made sure everything was setup and prepared in an way that looks as good as it tastes. Chef Cordelia's food was a huge part of what made my wedding feel unique and specific to my partner and me. Cordelia catered my wedding in May 2016 for over 100 friends and family, and I can't wait to find a reason to work with her again. Cordelia was quite skilled in helping us decide on the dishes, even when my partner and I were both picky and clueless. We had a tough request: we wanted an all vegetarian dinner that would satisfy our meat-loving family AND represented our family's cultures: Chinese, Japanese, Polish, and of course Mexican since I grew up in LA. But we also had no idea how to make all of that make sense for a dinner. Based on these requests and the foods we liked, she drew up a sample menu that hit everything and perfectly matched our taste. The tasting was personal and friendly. Cordelia was easy to talk with, and we felt comfortable asking questions and giving feedback. Almost everything at the tasting was excellent. We chose watermelon gazpacho, curry cashew lettuce tacos, and pizzettes for appetizers, and a vegetable pasta, two salads, and tamales for entrees. She hit the mark on everything we wanted and made sense out of our eclectic tastes. We loved her food so much that we shooed away family during the wedding so we could actually enjoy her dinner. (We also took home any and all leftovers so we could enjoy them at home.) Her staff was wonderful and genuinely excited to be a part of the party--which is so important when you're hangry (hungry+angry) and wild with stress. By the end of the night, we had multiple people tell us Cordelia's food was the best dinner they'd had at any wedding. Even my meat-loving brother said it was better than his wedding's food. Incredible!!!!! My fiancé and I immediately fell in love with the Lodge at Malibou Lake and that led us to Chef Cordelia. When first looking at the menus we were blown away with how many items we could choose from and also the creativity behind each one. Then the best part was getting to try her creations! We went to a dinner at the Lodge, they do them every month for couples that are having their wedding there or thinking about it, and I can speak for both of us by saying we couldn't be happier with our choice of Chefs. She is so friendly with an energy that is so welcoming and kind. Now... the food! We loved: baby spinach salad with strawberries, goat cheese, and a white balsamic vinaigrette, wild mushroom pasta, the bacon wrapped apricots, miso brûléed salmon and the hamachi with avocado purée. We attended the caterer's tasting about 6-months ago and we were very pleased. The food and drinks were great. But it was not the same on the wedding day. The drinks were basic and the food was undercooked and raw. Her quality went out the door. The venue was nice but the in-house caterer was not worth the price. I took the plunge and hired Chef Cordelia to cater my Mendocino wedding, based on previous positive experiences with her. I felt strongly enough about hiring her, in fact, that I asked her and her staff to travel from LA to cater a 110 person wedding for an entire weekend. And I'm really glad I did. They were, hands down, the best vendor experience of the wedding. I benefited from their professionalism, especially when my coordinator turned out to be a serious disappointment. I believe that Chef Cordelia picked up some major behind-the-scenes balls that the coordinator dropped, but I'll never know for sure - that's how smooth the Chef and her staff were. As an overwhelmed bride, I deeply appreciated the coverage. The menu included salmon, risotto and steak - all delicate items that require exquisite timing if you're serving a big crowd (I later discovered). And for hors d'ouevres we had these amazing lamb 'lollipops'. So good - I wish she had a restaurant near me so that I could order those again and again. Cordelia worked with me on a budget, and didn't bat an eye when I explained my dietary restrictions. I'm telling you, I didn't cry once during my ceremony, but walking into the dinning hall and seeing the gorgeous dessert buffet they'd laid out for me, where I could taste everything on it because it was *all* gluten-free, was the 'gotcha', and I totally teared up. They even stayed up late to serve up a midnight snack for my guests - poutine, in honor of my Canadian bridegroom. It was a huge hit. I got more compliments from my guests on the catering than any other service at the wedding. It's a such wonderful experience when you trust someone with one of the most important events of your life, and they exceed your expectations at every turn. Chef Cordelia catered my wedding in October of 2012. She helped us choose a menu that reflected our tastes and honored our budget, she made sure our friends and family with allergies and various diets felt respected and cared for, and she wowed our guests with a delicious, well crafted meal.
