Only Chef Christine could have made my mother's 50th birthday party such a huge success! Most of the 12 guests were not vegan, yet by the end of dinner they were singing her praises, and 2 guests swore it was the best dinner they had ever had. The Menu: APPETIZERS: fresh spiced apple cider white bean bruschetta served on toasted baguette stuffed mushrooms butternut squash soup shooters (definitely the best soup I've ever had!) MAIN MEAL: shepherd's pie served in individual ramekins (insanely delicious) brussel sprouts (the birthday girl's favorite, which Christine expertly transformed into a crowd-pleaser) kale salad DESSERT: A lovely 9' round double layer lemon flavored cake with lemon curd filling, topped with vanilla frosting. The cake was beautifully frosted and delicious. EXTRA: She also baked 2 dozen lemon raspberry muffins for the next morning's breakfast. I had never worked with Chef Christine prior to planning this party. I found her on Yelp and relied entirely on the reviews to make the decision to hire her. And what a good choice it was. She was professional, prompt, and helpful throughout the entire planning process. And she was willing to travel (for a nominal fee) to Laguna Beach, where the party was held. She arrived on time at the location at 11am, and cooked all day until dinner was served, then cleaned up the kitchen, so I could enjoy the party alongside my mom. My husband and I are Vegan, and we wanted to share great vegan cuisine with our non-vegan friends and family for our Wedding Rehearsal Brunch. My Matron of Honor hired Chef Christine to cater the brunch. She did a fabulous job!!! The food was so good, my mother loved it and said she developed a greater appreciation for my choice to be Vegan. Most non-vegans think that we just live on salads and "fake meat that tastes like cardboard". Chef Christine surprised them all with a variety of vegan versions of familiar foods like egg-less quiche and cashew cheese. I feel so fortunate to have met Chef Christine recently. By chance I heard her speaking about a Vegan Cooking class she was teaching at Whole Foods and after only a few minutes of bugging her, I knew I must take cooking lessons from her. Relatively new to the world of Vegan cooking, Chef Christine led me by the hand so very patiently through several in depth but totally accessible cooking lessons. I learned so many incredible basics to Vegan cooking that have completely transformed mine and my Husband's diet. From sauces made from scratch, to my own veggie burgers, to ridiculously awesome homemade seitan, I ended my lessons with her feeling so much more confident about my cooking skills and knowledgeable about basic flavor combinations. She even accompanied me during the shopping process which I found incredibly helpful. Bottom line, this chick is a badass! She's smart, patient, thorough, and full of helpful practical tips that ANYONE chef or not can apply in their kitchens. I cannot recommend lessons from Chef Christine enough (and I've taken several in town) She is far and away the best Vegan cooking instructor I've ever seen and I would not hesitate to send anyone I know interested in healthier cooking her way! I found Christine during a really difficult time for me. I had major foot surgery a week after being tested for food allergies and found out I was allergic to everything I was eating (dairy, gluten, soy, citrus, avocado, banana...it's ridiculous) and hence the cause of my health issue. I needed help changing my diet immediately, and couldn't walk or drive, so I decided to hire a personal chef. Christine's food is delicious and pretty! She has introduced me to so many different vegan options and alternatives that I'm not missing those other things. Best part, my health issues have become immensely better. We love her food so much, and she makes life so much better and easier for me that we have decided to continue to have her cook for us weekly. My husband and I also took a private cooking lesson with her, it was super fun, we learned a lot and made some really yummy food for the week. I am about as anti-vegan in my eating habits as you can get, but I love amazing flavorful food, and Chef Christine's cooking is just as good as an amazing steak or fried chicken. I have been able to try her cooking several times now, and I know it will always be amazing! On a professional level Chef Christine is easy to work with, organized, and will make sure that you have great food. Her brownies are one of my favorite things to eat, but trying things like her vegan cream of mushroom soup was a perfect example of warm comfort food. I have also attended some of her cooking demos and they are a joy, plus samples make it a blast! My husband surprised me with Chef Christine for my 30th birthday. It was such a wonderful experience! We made our own seitan, which demystified that food for me and which I will definitely be making again (with the delicious piccata sauce), a soup that taught us about flavor balance, spring rolls (with butternut squash- yum), and a quinoa salad. I can't say enough about how easy she was to work with & how delicious, creative, beautiful & healthy all of the food she made was. She is a master of blending good taste with gorgeous presentation. I have to keep things Gluten free for my diet and Christine was very knowledgeable in this area and we came up with a delicious meal lesson plan. I am one of those meat eaters that always doubted that a strictly vegan meal could be really flavorful and delicious... Boy, was I wrong! I attended a class where Chef Cristine was giving a food demonstration at Whole Foods. On the menu was: Curry Scented Butternut Squash Soup, Salad Greens with a Tangy Apple Dressing and a No Bake Sweet Potato Pie. It was scrumptious! Christine was a really good instructor. She explained all the steps involved in detail, and even gave options for variation. She was very knowledgeable and had interesting insights. While I am not sold on a strictly vegan diet, I am certainly more willing to swap out a carnivorous meal for a healthier vegan one (once in a while ;) now! A close friend gave us a cookery class with Chef Christine for a gift. Christine spent the afternoon teaching me and my two daughters some amazing recipes. We are all vegetarian but she taught us dishes that were new to us. We made the best Shepherd's Pie I've ever tasted - with tempeh replacing the meat and sweet potato topping as well as an incredible sauce. We also made a delicious spinach quiche with tofu and spelt pastry - fantastic. We've made the Shepherd's Pie again on our own and it was a big hit. Christine is organized, inventive, patient and lovely. We had such fun. We would definitely have her back for another class or for catering. I have no hesitation in recommending her.
