Walking through all the stalls in Hmong Village, I noticed two types of pork belly, one with a fried crisp outer skin and another that seemed to have sweet glaze on the outside. Since I've had plenty of Hong Kong style roast pork with crispy skin, we decided to go with the glazed one and chose Celine's Kitchen since it seemed have a decent sized line of patrons. We only wanted a small size to sample, but when I got to the front, the cashier said they were out of small! But then she changed her mind. I guess she was able to cut one of the larger pieces of pork belly into multiple portions?
Pork Belly, Small ($10) - I'm not sure what exactly I was expecting, but this pork has that kind of crispy gone soggy type of texture, meaning that the skin is leathery and very chewy. Other than the skin, it's pretty good, quite tender with fatty and lean bits interspersed to alternate between textures and mouthfeel. It's a salty delight and comes with a dipping sauce that's full of chiles, giving a good spicy heat combined with strong tangy notes that complements and cuts through the fatty pork. (4/5)
Unfortunately after having tried this version of pork belly, I think I prefer the crispy skin roast pork more. The skin on this pork belly is just too leathery feeling. I'm not sure if it's supposed to be like this, or it's a quirk of this particular stall.
