There is a sentence on CBD Provisions' Instagram that I want to read to you because it is doing a lot of work in very few words. "A brasserie in boots." That's it. That's the whole thing. French discipline, Texas spirit, six syllables, no further explanation offered or required, and if you do not immediately understand exactly what that means the moment you walk into The Joule on Main Street then I do not know what to tell you except that the rosemary tallow fries are going to clarify things very quickly. CBD Provisions opened in 2013 as the Joule Hotel's in-house restaurant, became famous for a crispy pig's head carnitas that required you to pull strips of meat off an actual half pig's head at the table and tuck them into tortillas, which is a dish so committed to its own bit that it belongs in a museum, and then closed in July 2025 for a months-long renovation that brought in new culinary director Sezer Deniz. Deniz trained under Chef Jean Paul Naquin at the Institut Paul Bocuse in Lyon, France. He has twenty-plus years in Michelin-starred kitchens including Alinea in Chicago. He is now making breakfast tacos inside a hotel in downtown Dallas and I want to be very clear that this is a promotion. The room has exposed brick and wood floors and steel beams and mosaic tile and antique mirrors and railcar booth seating and a center banquette and stone tabletops, all of which sounds like it should be competing with itself but instead produces the specific feeling of a place that has been here long enough to know what it is. I sat at the bar, which is the correct place to sit, and ordered the short rib corn cake stack, which is braised short rib and avocado and two poached eggs and a poblano hollandaise and which arrives looking like the cover of a cookbook that does not exist but absolutely should. The poblano hollandaise is the detail I keep returning to. Not regular hollandaise. Poblano hollandaise. Someone in that kitchen made a decision to take a classical French sauce with two centuries of culinary tradition behind it and introduce it to a pepper from Puebla, Mexico, and what resulted is something that makes you look at regular hollandaise and think, you had potential, you just never reached it. I ate the entire thing and then contemplated ordering another one and then did not because I am a person with limits, technically. The CBD Provisions burger is a double smash with American cheese and grilled onion and house pickles and something called fancy sauce, which is a name I respect enormously because it is not pretending to be anything other than exactly what it is. It comes with rosemary tallow fries, which are the reason I will order this burger every time I come here for the rest of my life. Rosemary. Tallow. Fries. Three words that in combination produce something that should be legally classified as a controlled substance. French in method, Texan in manner. Boots and a brasserie. The Joule has been on Main Street for years and CBD Provisions has been feeding people inside it for over a decade, new chef and new tile floors notwithstanding, and it has figured out the thing that most hotel restaurants never figure out, which is that the goal is not to remind you that you are eating in a hotel. Had dinner here last night for a group of 10 and it was ok. Our waitress must have been new. We ordered a few different apps and clearly didn't order enough. Would Have been nice for our waitress to say " this comes with 5 pieces or this comes with only 2 pieces. None the less we made it work. We order 10 entrees with a few different sides and it took a very long time to get our entrees and she forget 2 of them. By the time they bought out the other 2 entrees the other 8 had already eaten about 75% of the entree. The steaks were not cooked to the temperature requested. I've been hearing my husband rave about the CBD Provisions pig head carnitas for almost as long as we've been together, so I'm happy that we were able to stop by with friends last month. We booked two pig heads in advance for 7 but dropped down to a group of 5 the day of; needless to say we had a not-insignificant amount of leftovers, but not for lack of trying :D The carnitas and sides were as delicious to old and new fans alike. Tragically, we were told that CBD Provisions is closing at the end of May to make room for a new concept coming to the Joule. You've got two weeks left to try the phenomenal carnitas and bring home any leftovers/bones to make a delicious pork stock with. Sitting within the hotel of Joule, CBD Provisions has a great ambience and the taste is somewhat there. Presentation of food and the lobby is picture-worthy as well. That said, the overall good ends around there. This restaurant has been here forever; I hadn't visited since pre-pandemic. On a Wednesday night, it was a lot half occupied. We had an early dinner (seated at 5:30), yet several items were "out of stock" already. Not sure how that's possible..including basic items like sourdough bread and the peanut bar dessert. CBD Provisions is a dining establishment in Joule Hotel. We dined here on a Sunday evening with low occupancy. Contrary to some of the reviews, we did not experience long wait times with our party of five, and our waitress was very nice and pleasant. The decor of the restaurant is like an elegant industrial style. Think warm woods with metal accents and dim pendant lamps with exposed filaments. The lighting is low throughout the restaurant except for the open kitchen. I like this dynamic. It's really neat to be able to see the kitchen in action. We had reservations and were seated right away. Two of the people in the party were going to share the pig head carnitas, so the arraignments for that were made forty-eight hours in advance. I tried a little taste of it, but because I'm pretty much pescatarian, I'm not going to review that aspect of the meal. I started my meal with the St. Arnold's Root Beer, which was great! It was easily the best root beer I've ever had. For an entree I chose the shrimp and grits. Now, when this dish arrived, it smelled heavenly, but when I started to dig in, it was beyond salty. It's like the shrimp was bribed and then the butter sauce was just overpowering. It's a shame because I could tell the flavors were great, but just overshadowed by too much salt. For dessert I had the Banana Pudding (they called it something else, but it was essentially a banana pudding in a jar). I like parts of it. The whip cream of course was great and the banana pudding itself was good, but once I got down to the bottom there was a rich banana creme that tasted like it had goat's milk- which I am not a fan of. I ate around it, but for $15, I feel kind of disappointed. Overall, I felt like the dinner was good, not great. The prices are too much for what you are getting. For example, my shoring and grits dish was $34- but it seemed like the max ceiling I would have wanted to pay for the finished product would have been more in the $28 arena and same for the dessert- it felt more like an $11 dessert. One thing I would also like to add is how freezing cold I was throughout the entire meal. I wore a cashmere long-sleeve dress and yet the A/C was cranked up so high that I felt the cold whip through my clothes like I was wearing a paper-thin cotton tee. Overall, I think CBD Provisions has a lot going for it. Nice decor, exciting location and some interesting menu items, but my experience here fell short of my expectations. This is my second time visiting CBD. This place is located in the Joule and is convenient if you live nearby or in the area. A restaurant gets more points for having alternatives for non-pork eaters. Nothing worse than wanting meat with breakfast and it's all pork based. This place offers chicken sausage which is yummy, btw! The pecan pie French toast is good, but a bit too sweet for my liking, but the Texas Chili was delicious! It's Texas Chili, fyi, so if you are looking for beans and things you won't find it in this dish. The cornbread was AMAZING! It was buttery, hint of sweetness from the honey, and moist, but had the extra crunch around the edge (true cornbread lovers know) it was good and almost made me wish I just ordered that instead of the French toast. We ordered drinks, the risotto scallops and the salmon. 45 min+ later the food arrived. The waiter apologized for the wait and said "careful the plate is hot"... The plate might have been hot but the food was luke warm boarding cold. This restaurant is shady. I had made a reservation online for a big group 2 weeks ago and nothing on the reservation states that they cannot split our checks. They called me to confirm and nothing on the message that they cannot split a bill also. Had I known first hand, I would have gone to another establishment that will split checks with no problems. And there are many establishments that do that as we go in big groups all the time. And the ones that don't, they will let you know that they don't split checks. So last night we showed up with a group 14. For a Saturday, there were only a few tables that had guests and not packed unlike most of the restaurants in the city. At that point, my guests were already arriving and too late to change. But my night was already ruined by this. CBD Provisions, I've been coming here for years and even stayed at the Joule a couple of times. The way you tricked us in coming to the restaurant without notice of the split check had left a bad taste in our mouths. I and everyone at my table will not be coming to bring business to your establishment in the future. I understand now that you're desperate for customers--Saturday night and your restaurant is empty. We were treading lightly with this meal because we had plans to eat more stuff in the afternoon before departing on our flight back home. We both elected to order a lunch cocktail because their cocktail menu is overflowing with exquisite-sounding cocktails. I ordered the "light lunch" which was actually accurate, with gin, lime juice, coconut water, lemongrass syrup, and soda water. I don't think I've ever had coconut water in a cocktail and it was a really nice addition to this refreshing beverage. GF ordered their bloody mary which was nice and spicy. We only ordered an appetizer to split, and went with their hummus. It is deliciously smooth and creamy hummus topped with roasted peppers, green olives, onion, and feta cheese and accompanied by warm pita. This was probably some of the best hummus I have had at a restaurant that isn't Israeli or mediterranean. It was as authentic as can be and absolutely mind-blowing. All staff wore masks and gloves, the menus were on paper and seemed freshly printed. I'm guessing they are not reusing the menus which is great as well. When guests left they were thorough about wiping down their seats and tables. The server was very polite and gave us plenty of time to think. He kept a good distance as well. The menu was rather small, I'm not sure if this was as a result of Covid 19 but that is why I have given it a 4/5 The food itself was a 4.5/5. Servings were on the smaller side (other than the sandwich) but the food was great. My roasted chicken had lots of flavor and the vegetables on the side were great as well. My phone was on it's last leg and my camera was failing me. .. excuse the poor photo quality. I thought, "Yup, that's a pig head". We were excited to try and dug right in. It was juicy, tender and the skin was crispy. Unfortunately, it wasn't seasoned. There's a popular carnitas spot I frequent in Chicago called Carnitas Uruapan. Nothing fancy and I believe they only use salt. I added salt, but it's not quite the same when added tableside. The Housemade Shells are essentially mac & cheese with bacon. .. forgettable as was the Chinese Broccoli. Our waiter was friendly, but disappeared for long stretches despite it being a slow night. One of the best meals I've ever had! Definitely a must try for any foodie in the Dallas area. The carnitas here come in the form of a full sized pug head cooked to perfection, with the outside crafted into a perfect crisp, while still keeping all the right juicy goodness in all the inner meat. As sides, there's a veggie salad that comes with cilantro, onions, and radish, plus the green and red salsas and a stack of tortillas. This is big enough to feed 4 with plenty to be leftover.
