The dishes are thoughtfully composed, well seasoned, and always fresh. Avocado toast is usually a throwaway offering, but they do it right here, fully loaded with pesto, heirloom tomato, and a ton of avocado. There have been some recent changes that are a bummer though. I'm really sad that they seem to have taken the vegan chorizo and potato hash off the menu, which was simply the best brunch dish. The other issue which I hope they take note and move right away is the trash for plates and silverware. It is directly next to the fresh silverware and takeout boxes. That caught my attention and it's not a good place for the trash. Definitely plan to come back, it is worth coming and trying all the food items they have. I've spent my life chasing the perfect crust, comparing everything from the legendary pie shops in Manhattan to the pristine corner slices in Pittsburgh. I didn't think Austin could pull off truly authentic pizza. I was dead wrong. Baldinucci is absolute sorcery. The moment I took a bite of their Roman-style pizza, I was instantly thrown back to the tiny, narrow pizzerias I stumbled into in Italy. It has that exact, hyper-specific airy crunch that is so incredibly hard to replicate outside of Europe. The dough is clearly fermented with patience. It's light, shatteringly crisp on the bottom, and has those beautiful, irregular air pockets that give it a pillowy structure without ever feeling heavy. Let's talk about the sauce, because that's where most places fail. It isn't that sugary, paste-heavy stuff you find at standard joints. It is vibrant, bright, and tastes intensely of sun-ripened tomatoes and clean olive oil. It is remarkably fresco; striking that perfect balance where the acidity cuts through the richness of the cheese without overwhelming the palate. The vibe inside the West Lake spot is casual and unpretentious, but they take their craft seriously. Food service is streamlined and efficient; you order at the counter, and they pop the slices back into the oven so they land at your table screaming hot. The staff is genuinely proud of what they're slinging, and they should be. If you are an East Coast transplant drowning in a sea of mediocre pies, do yourself a favor and get over to West Lake. It's the real deal. PS: The gelato flavors are also sorcery. However, a review of their gelato is for another time. I must continue to savor the pie for now.

Are they hoping the better-known Mediterranean bowl place will be so full they can catch their overflow? People in a rush might skip the line and try this less-known healthy bowl food restaurant instead? But I digress... I had tried CAVA four times or so and every time I saw MAD Greens and thought, Someday I'm going to try that place. Well, last Sunday was the day. I got to eat what I wanted because I was eating solo. I'm going all in on this trial run, I thought to myself, so I bought one salad for that day and ordered another to be my lunch the following day. I walked in and was the only customer in the restaurant. I was greeted warmly by the young man behind the counter, who called me queen and had no complaint about my asking for no tomatoes and the dressings on the side. I tried the Greek one and the sesame sriracha one. The place was clean enough and the employees seemed to be enjoying themselves, chatting and goofing off a reasonable amount. The bowls were great. I chose the Greek one first when I realized it had pita chips inside. It came with two dressings, the creamier of which was a.m.a.z.i.n.g. Confession--I am a recovering picky eater and I hate cucumbers, but I love sneaking them into my body underneath delicious dressings and salty kalamatas. The second day I ate the sesame sriracha situation. It had tofu, which tbh I have never successfully eaten, and it was really good. It reminded me of the paneer in Indian food. That salad had edamame too, so I was definitely satiated and I'm guessing I got plenty of protein. Overall, I will definitely go back. CAVA has had some consistency problems for me, as well as some of my favorite offerings being limited-time or seasonal (isn't it the worst when restaurants lure you in with seasonal offerings you can't count on?!), so I'm glad to have had such a positive experience here and I'm hoping they will be consistently good.
