Pampas was such an awesome last minute find on the Strip. In a busy area with so many restaurants…read moreand crowds, it meant a lot to find a place that welcomed us in and still made the experience feel special. The food was great, and they definitely do not let you leave hungry. Between the different meats, sides, and salad bar options, there was always something good coming around. The service is what really stood out. Everyone was attentive and friendly, and I especially want to thank the owner for taking us in last minute. That kind of hospitality makes a huge difference and honestly turned our night around. It felt like they cared about making sure we had a good time, not just getting another table seated. The ambiance was lively, fun, and comfortable, which made it perfect for a Vegas dinner. We left full, happy, and grateful we ended up there. Definitely a spot I would recommend if you are near the Strip and want a meal that feels welcoming, generous, and memorable.

The sides, especially the rice and beans, were actually solid. That's about where the positives stop. The meat? Not good at all. Felt like we were getting the worst cuts they had. Dry, tough, and just not flavorful. For a place that's supposed to be known for meat, that was a big letdown. Service and atmosphere were fine, but that doesn't make up for the food. If I had paid full price for this, I would've been even more disappointed. Overall, cool concept, but the execution just wasn't there. I wouldn't come back.

We passed on the lamb because none of us are fans. Will definitely come back again. Service was a little lacking. Some of the meat servers were a little impatient but nothing worth saying something to a manager. Our server was really attentive until the end. Not sure what happened but he left us for about 25 minutes after manure we were done eating. We had to ask another service if we could get our bill.

However we started coming less and less because quality control has been going down, and management doesn't seem to really care. We went last Friday and the food runners were really off their game. Salad buffet looked barren. The 20 minutes (yes I timed it) of us sitting there we were only approached 3 times and each time was with pork options and lamb. Told our waiter and he had people with beef options come by. Each cut was medium well or well done when we asked for medium rare. A lot of the times they would bring cuts that had no sear or char. When we would say no you can tell the runners were annoyed. At one point I had a small hill of overcooked meat, or bland cuts. The waiter was awesome. He got frustrated with the runners for us. He had to run back 2-3 times due to them not bringing out the right meats. I voiced my concern to a manager and he didn't seem to really care at all. We decided to end dinner early and get dinner somewhere else. We won't be coming back. For $65 a person I expect better quality. We will be taking our money to the other Brazilian steakhouses that are just as good if not better for cheaper.

From the jump, everything just clicked. The pacing felt natural, nothing rushed, nothing forgotten. You could tell there was intention behind the experience, but it never felt forced or overly polished. Just... dialed in. As it was a bit of a slower early evening, chef/owner Justin came to check in several times to see how we were doing and provided explanations of the food and the idea behind each bite. This not just dinner...it was an experience. I went all in on the menu and I'm glad I did, because this kitchen is not playing around. There's a confidence here that shows up on every plate. But a few dishes absolutely ran the table. The foie gras is rich in the way you want it to be, but balanced enough that you don't feel weighed down after a few bites. The wagyu carpaccio is ridiculous, melts instantly and somehow still feels light. And the toro crudo... that one didn't stand a chance. Silky, clean, just enough citrus and heat to keep it interesting. It's the kind of dish where you finish it and immediately wish you hadn't shared. And then there's the ensalada de naranjas. I ordered it three times, which honestly says everything. It shouldn't be the dish you keep thinking about, but here we are. The frisée and fried kale bring texture, the manchego gives it that salty edge, the candied walnuts add just enough crunch. But the oranges are unreal. Sweet in a way that almost doesn't make sense, no bite, no bitterness, just pure citrus perfection. You can tell they're something special, not the kind of thing you find just anywhere. What I appreciated most is that nothing felt like filler. Seafood, meat, vegetables, every dish had a purpose and actually delivered. It's rare to go through that much of a menu and not find a weak spot, but they pulled it off. And the service matched the food. Attentive, sharp, and genuinely welcoming without hovering or making it feel like a performance. The kind of service that makes the whole night flow without you even noticing it. This is the kind of place you leave already planning your next visit, trying to decide if you reorder your favorites or pretend you have self control and try something new. Either way, it's awesome.

We made reservations just in case but arrived around 630, and we were the only ones. Restaurant is nicely decorated with a modern simplistic vibe, definitely welcoming. We decided on the premium menu, they explained the top 3 items were only a one time order and everything else was as much as we'd like. 3 orders per person and/or they'd basically give us a tasting menu of all the offerings. We thought perfect because we wanted to try everything anyways. The courses flowed nicely and we were rarely without a fresh plate or food in front of us. The staff was super polite and the chef came around at the end of dinner to talk and asked us how we liked the food. We reordered some our favorites, and left stuffed to the gills. We are all big eaters, and while it is smaller bites, there is plenty of options and chances to order. We left very content. They have a pretty good all you can drink option as well. If you plan on having more than 2 glasses of sangria, might as well get it as it's cheaper. We will definitely be back , some of ur favorites were: Foie gras of course The filet Iberico ham The grilled octopus

Because this was a private event, my experience may differ from a typical visit. I've focused this review only on the restaurant's food and service. After checking in, we were led to a reserved section toward the back of the restaurant and allowed to choose our seats. We joined a few other guests at a large table. Each place setting had a menu, and after about 10-15 minutes, our waiter introduced himself and took our drink and food orders. Unlike the restaurant's usual all-you-can-eat Brazilian steakhouse experience, this event offered an à la carte menu. We could order appetizers, a few mains, the salad bar, and desserts. They were also running happy hour from roughly 6PM to 8PM, with many items half off. I ordered several appetizers: Bruschetta, Meatballs, and Salgadinos. The Bruschetta was excellent--three large slices of bread generously topped with fresh tomatoes, herbs, and balsamic glaze. The Meatballs were disappointing. We received three that were only slightly warm and appeared to have come straight from the salad bar. The Salgadinos were the most interesting of the three. You get four pieces with different fillings, but the differences were subtle. They were nicely breaded and fried, with a mashed potato base and protein filling inside. While they tasted good, it was hard to tell which filling was which. The event itself was quite loud, but even on a normal night the restaurant has a lively, energetic atmosphere. It's not the place for a quiet, intimate dinner. Overall, I might return if I'm craving Brazilian BBQ, but I probably wouldn't attend another murder mystery event at this venue based on the food quality alone.
