The menu was very complete for the various meat served. I usually like to get Cabeza but I saw that they had chorizo on the menu. Most food trucks don't sell this type of meat for some reason. I really like the spicy flavor of this meat. So I ordered it with cheese and no cabbage (I hate cabbage). I added a flavorful red sauce from the condiment bar. Perfect for me but to hot for Matt. The meat was well cooked so you didn't have any orange grease dripping out of the taco. Some of the best chorizo I have ever had at a food truck. Matt ordered his usual carne asada taco and a carne asada corameles. As you can see from the photos, he added a lot of condiments from the outstanding sauce bar. He liked both of his lunch items. They had a very good condiments bar and had plates and cups to serve what ever you want to add to your lunch. The service was fast and efficient. They even had some one to help you at the condiment bar. They had a nice covered patio and Spanish music playing on the radio. The patio was very clean and the chairs were comfortable. Since Matt never finishes his lunch and takes the remains home for dinner, they offered him a bag to put the food and condiments in to go. The only drawback I saw was the noise from the road since they are right on the edge of the road. Nothing they can do with minor noise but after awhile you don't notice it as much. If you are in the area, I would highly recommend this food truck for lunch or dinner.

We got lucky because we were early but as soon as we sat down to wait for our food, the place started filling up. I can only review the carne asada tacos and salsa. Good, lots of meat, not a lot of gristle so that's a win in my book. We took both the red and green salsas with us and both were delicious. I was behind two parties of two and my food took 15 minutes. I opted to take the food to go, since it was 9:45 pm. Thats always a risk because the food might not be as fresh as when it's freshly served. The woman ahead of me asked for well done crispy bacon wrap. I should have done the same, but I wanted to try it the standard way first. I really wanted to love this, but the standard soggy bacon wrap is not my thing. My stomach could not cope with the grease either -- this looks like pretty low quality bacon that is mostly fat. I was pretty disappointed and only finished half!

The meat was cooked and seasoned perfectly, and it tasted delicious with the simple salt and pepper flavor that really lets the meat shine! The owner was incredibly friendly and wasn't just behind the scenes--he was out on the floor helping his team and making sure customers were taken care of. It's clear he genuinely cares about both his staff and his guests. Great food, outstanding service, and a welcoming atmosphere. We'll definitely be back!

And it's reasonable. I have been here a bunch of times and I have never had a bad experience. The decor is simple, colorful, and music not too loud. The staff is always nice and helpful. They run a tight ship here and it's noticed and appreciated. Is the birria the best? No. Is the Carne Asada? No. But they both are good. Not knock you off your feet good, but good. Get it? The Carne Asada has noticeable flavor and it's mostly juicy. I do mark it down a bit because it tends to be kibble like and not cut like traditional Asada. But it's forgivable. The birria could use a tad more salt, but it's flavorful and easy to eat. My favorite thing is the Chimi Sumo, it's a solid take on a Chimichanga and is the right amount of food. They are one of the very few places in Tucson that has keto tacos, so that goes in their favor. I want to try the Birria Pizza, I have yet to try one anywhere and I feel like Rollies can give me a solid first experience with that. All in all, Rollies is a solid, above average resturant in Tucson. I enjoy them, and it's a good place to have lunch or an early dinner during the week. Their prices have gone up over the years, to adjust with rising food costs. However, it is still worth the try! They offer a salsa bar on the side, with all the typical toppings. Additionally, they have indoor and outdoor seating. Staff is very friendly and they announce your order via your name on the intercom. Parking can be slightly limited, so just be cautious when turning and parking, since the space is tight. It's a great place to stop for lunch or dinner, especially if you are in South Tucson area.

In comparison to other places that are more on the 'fast food' side, we felt they were overpriced. Also it took almost 30 minutes for our food to be ready which seemed pretty lengthy, despite 3-4 parties in front of us. Most of what we ordered would have already been prepped. It was a solid place for Mexican food but did not necessarily stand out against other places we frequent throughout the area.
