Ate here today after a very long hiatus and the food tasted like I remember as a kid. Red cheese enchiladas are exactly as they were 20-30-40 years ago. My husband and I ordered Fajitas for two 30 bucks (sides weren't included but an extra charge (cheese/sour cream/guac) & two Margaritas each... The fajitas were just stew meat.... and the portion for "two" wasn't even enough for one. I have been eating here my entire life. This is at least the 3rd or fourth remodel I remember and the green beef enchilada plate is still great. This is a family owned and operated restaurant where the owners are on site. The new look is clean and more modern with hints of the past. I was sent here after hearing an advertisement. So we gave it a shot and glad we did! We ordered the fajitas, tacos, chicken burritos, and the margaritas. Before I knew it, there was a man in a yellow Speedo with his boyfriends on the table pouring shots into peoples' mouths having the time of his life. No catfish at this place though, this ain't Dell's (who the man in the yellow Speedo said was actually a lady who died years ago after he spent years telling people he knew the male owner 'well'). From now on, we will route through Big Spring whenever we travel north from home because of this restaurant - it's honestly that amazing. If they were within 100 miles of us, we would eat here every time we go out to eat. Food: this is true Tex-Mex - exactly the kind we grew up with for 60 years! I had The Mexican Plate. Those of you who grew up on this menu will know exactly what that means. Actual tacos, by the way, not some preformed nonsense. And, yes, those refried beans are the real deal, none of that soupy, fatless cardboard. Oh, and remember ranchero sauce?!? Yanno, the version with heat instead of an overload of sugar?? Yes, and YES! Don't get me started on the margaritas ... let's just say they are for adults, made like a classic with tequila, limes, and orange liquor. My husband was equally pleased with the Tex Plate, an old favorite combination of cheese enchiladas covered with sauce and topped with eggs. Service: we were treated like we were the only ones at the restaurant, even though we were clearly not. We were treated with respect, courtesy, and like people. We felt like everyone put their hearts and souls into this place and it showed in every aspect. Ambiance: even though it was 98 degrees outside, we sat on the shaded patio with our beloved dog. It's so difficult to find a nice place to eat with outdoor seating when we are traveling and it's too hot to leave the dog in the truck. Not only did they welcome us and our sweet dog, but they were as solicitous of and attentive to her as they were to us. So, while I can only speak to the convenience and welcome respite of the patio, I have absolutely no doubt the interior was equally accommodating and lovely. Boyfriend went here because they had the best cheese enchiladas before the remodel but since they reopened its gross. Told the owner Mark Gomez, about the food and he just made excuses and said well we've never received a complaint before, well thats funny because yelp gave him 3 stars so he might want to check that out before he opens his mouth. It's a Saturday night. It's National tequila Day. Myself and 3 of my family members have been in the car for 11 hours and ALL we wanted was some cold beers... Yelp said they closed at 10:00. We showed up at 8:50 after walking .6 miles from our hotel, only to be told that they were closing. No explanation. The manager (?) and workers were wiping down the bar and obviously ready to get out of there. Even if you aren't in the hospitality business, (and my husband and I have been for many years) this made very little sense to me. :( read more

I got brought here by some business associates. The outside of the business doesn't exacly inspire confidence - a rock-lot and a meh-looking building. When you get inside, you see how nice it really is. Clean, semi-modern Mexican look, and it is BIG. You don't expect it to be that big from the outside. We came here after calling around to see who was showing La Copa America. They offered to put on the Spanish channel for us, so that was that. We came straightaway. My wife ordered the (home made tamales). I got them to make me veggie fajitas (vegan-friendly - no cheese, no sour cream). When I asked the waitress about the beans, she confirmed that they were vegetarian and when I asked her to make sure there was no cheese melted on top of the beans, she said she was already on it (if you're vegan, you'll know people don't always think of this). Nice work! Portion sizes were very good. Fajitas were great, beans were very good. Recommend caution with the pico de gallo, though - it's even hotter the salsa! My wife enjoyed the tamales - one beef, one chicken, one pork. She had the sopapillas for dessert. Tasted like homemade she said. Carlos' is a Big Spring institution. It's definitely a stop on any trek through Big Spring. This place is consistently good. You can get so much food here for a fraction you'd pay anywhere else, and the service is great. The place was packed even at mid-day weekday. We had the fajitas and the cheese enchilada, and of course an endless bowl of their chips. One thing to point out is they have the best rice I've ever had at any Mexican joint. Don't know the secret, don't want to know, but keep it coming. The atmosphere is clean and spacious, and you can tell on the weekends this place is going to require a wait, so get their early. They don't have the TV's blaring, or the music cranked up- they really want to provide a great experience. read more

The food was bland, at best. Salsa was like pico de gallo mixed with ketchup. When I asked which of the red or green sauce for my enchiladas was spicier, she said neither... and she was right. The red sauce had no flavor; I added a side of ranchero sauce because she said that was the spiciest they had and even that wasn't spicy. I only managed to get halfway through my Tex enchiladas (the flat ones with eggs on top). My friend had the recommended dish, which was just a chicken breast covered in grocery store fries and unappealing queso sauce. I'm not sure how this place stays busy serving up food like this. Usually love Carlos - Went on Saturday night and naturally it was busy. Its Saturday night and the options are very limited here in Big Spring. For a party of two, it took over an hour to be seated. No big deal, but FINALLY got sat down and it was another good 30 minutes until we even knew who our server was. She took our order, another 30 minutes until our food arrived, WRONG. Forgot the rice and beans on one of the dishes(HOW CAN YOU FORGET THAT WHEN ITS A STAPLE THERE!) forgot my friends tortillas for her fajitas, then bit into one of the tacos and had to spit it out. It was either dog food, or some very, very old rotten meat. Long story short, $60.00 later and not even half of the food was eaten. Save yourself time and money and go somewhere else, heck Taco Bell would of been better than here! read more

The nacho plate is really good. But!! The service is some of the worst and the place is cramped and dirty. It's always a last resort to come here. There's already loads more Mexican places to try so I wouldn't bother coming here. They do offer huge glasses of tea, but the service is so bad and it's so cramped with loud TVs that it just isn't worth the drive or money. read more

Men's & women's restrooms are filthy. No soap in dispensers. How do the staff wash their hands!?!?!? Service was almost non-existent. I understand we came in at 9pm on a Friday night, but they're open until 11pm! It's been a few months since I've been to Carlos but it wasn't that busy when we got there and no one acknowledged us coming in. Several wait staff walked past us. Pilly, the owner gave my kids after dinner mints, which I don't mind, after dinner. I had to sign in even though it wasn't too busy. We get seated and the guy at the table next to us gets his food and get this, he takes a few bites and got up to use the restroom, the staff cleared his table to seat a couple there. He came out asking where his food went and that he wasn't done! All he got was a halfhearted, "sorry" from our waitress. Food was typical tex-mex fare for Big Spring. Tea is only available unsweetened so you're required to use a ton of sugar that doesn't dissolve in cold tea or use chemical sweeteners. Salsa is bland, my kids say it taste like watery ketchup. If you like fajitas that come out sizzling on a skillet, then skip the fajitas because that's not how they serve them here. The meat has a good flavor but it's like it was boiled and then seared to give the illusion of being grilled. Rosas has better fajitas at a better price, albeit you have to travel to Midland. I'm sorry I just don't think that Carlos' lives up to its reputation anymore. You're better off visiting Casa Blanca down the road. read more
