The service was friendly but they seemed short staffed that night. We were trying to refill our water glasses but it took a while since I couldn't find any waiter or waitress around. Now let's start with the food:
Focaccia: 5/5 bread was warm, toasty and tasty but the dip was the highlight
Leeks with smoked mackerel, mustard, tobikko: (2.5/5) too creamy with a hint of mackerel and leeks
Calamari chou-fleur, asian pear, chili beurre blanc: (2/5) very soupy and too much cream and not flavorful
Black cod miso sauce, daikon, kale: (2.5/5) cod was tender but my bite had too much miso on it. It was extremely salty and not well balanced
Beef tartare with mushrooms, Asiago: (1/5) mushy texture and way too much Asiago cheese.
Flank steak with burnt chili salsa, szechuan pepper sauce, pickled peppers: (2/5) steak was not tender at all and the sauce was overwhelming
Fried sea bass with bok choy, soya, nuoc mam (3/5): presentation was great but too many bones with too little meat. Flavor was good and I enjoyed the warm crispy fish with the Vietnamese style salad
Overall, my special dinner was disappointing. I felt like the main ingredient never shined and their cheese or cream or sauce were just too overpowering. I really wanted to like Cadet but it fell short of my expectations.
