Thanks to Stemma showing the Seahawks playoff games on their TV, I had the opportunity to enjoy a meal from Burnt Side Down not once, but twice in the past couple weeks! Located literally steps from the brewery, and with handy online ordering, this was a fun option for me and the dude as we watched the 'Hawks stroll to victories over the 49'ers and the Rams. The first game, we enjoyed the B'Ham and Cheese, featuring bacon, ham, cheese, and a toasty rosemary bread. In a word: YUM! Last game, we shared the Jalapeno Popper which was too spicy but in a good way. You know what I mean? Like you can't stop eating because it's too spicy and you have to take a few sips of beer between bites and you immediately crave another sandwich because it was sooooo good? And yet, so spicy? Speaking of beer, these sammies pair well with all of my Stemma faves. The Jalapeno Popper went especially well with Stemma's Mexican Lager, though the dude thought it was equally delish with his hazy IPA. Will we return for the Super Bowl and a grilled cheese trifecta? If you're a grilled cheese person this is the place to go! We stopped at the brunt side down for some lunch, we ended up ordering the easy cheesy, the Italian stallion, the send it, and the classic kids meal. The sandwiches are massive and loaded with cheese! The kids had fun showing off who could get the longest cheese pull, and the easy cheesy ended up winning. They have canned drinks for you to choose from (mostly polar seltzers) but if seltzer waters are not your thing the brewery offers many drinks! Service was quick and nice, and there was tons of seating outside near the food truck. Overall great spot for a nice lunch before going off and exploring Bellingham. read more

Got off the plane, a bit tired and damn hungry. Drove straight to this spot I read about. Great grilled cheese, reviews said. Figured sure, let's give it a try. Holy hell, that was one of the most satisfying grilled cheese and tomato soup combos I've had the pleasure to enjoy. Devoured it like a starving man. Found this place, and it's located but Stemma Brewery. Nice variety of grilled cheeses, I went with the Italian Stallion grilled Cheese. It's like a pizza grilled cheese. My other friend got the Jalapeño Popper grilled cheese, nice amount of heat to it. And our other friend got the Send It, that was very filling. Also a cup of their tomato soup. Who doesn't love grilled cheese and soup and the delicious beer of Stemma? This new place has taken over Sweet as Waffles's old truck and will be a new fixture at Stemma. They have a variety of grilled cheese sandwiches, and we got the two largest ones on the menu. They are not for the faint of heart - there's a LOT of cheese and it's a pretty good size sandwich. You have to reaaaaally like cheese because these sandwiches are packed with it. While ours were a little on the unmelted side, it was still quite full with three different kinds of cheese. We also added the jalapeños, which adds a kick. I couldn't finish mine, and my two dining compatriots were very full. Like "we might not need dinner" full. (To be fair, it was a pretty late lunch.) They are a liiiiitle light on the chips and pickle as a side, and a bit heavy on the sauce side, but that's easily corrected. I'd order light on the sauces, or on the side next time. I love the whole Stemma vibe and having Burnt Side Down on site as a food option is just an added bonus. Those grilled cheese are the best in town, by far. My one knock would be is the tomato soup. I believe having a good tomato soup with the grilled cheese sandwiches takes it to the next level and yours tastes like it's from a can (maybe it is). A tiny kitchen produces a lot of food. I was there Sunday afternoon looking for lunch the nice woman at the counter answered my question and took my order. She warned me that it would take some time to prepare my lunch as she handed me a device that would alarm me when my lunch was ready. I bought the Bham and the Gorgonzola along with a dessert. Amazing! The people working here are so nice. The sandwiches - INCREDIBLE. I got the Burnt Side Down Signature sandwich. It's creamy and cheesy and bacon-y and just pure delicious. Wow couldn't say anything more! This cute little food truck is in the parking lot of Stemma Brewery next to a bbq truck and a Birria taco truck. The smells when you pull in are heavenly! Cool place to meet up with friends and I only realised it was dog friendly when I was leaving, otherwise I would've had mine out of the car. The owner/server of Burnt was super helpful with suggestions for all customers coming to the window. Since it was my first time here I went for the Classic grilled cheese on sourdough with a cup of tomato soup (advertised as Campbells ). They give you a pager to signal when your order is ready. What I didn't expect: The cheese skirt! So crunchy and huge!! And the soup was made with water not milk, yay!!! Just like my mum made in the 1970s lol They have lots of choices of sandwiches with different fillings like French onion, Italian, and a pesto version. Also add ins like bacon and jalepenos etc She had baskets of crayons for kids to keep busy while you wait because they're cooking real food and it takes time. I thoroughly enjoyed my soup and sandwich, when you try not to eat carbs that grilled cheese is like you've died and gone to heaven! Tbh the only thing I would've done differently would've been a sprinkle of maldon salt on the outside of the bread, but that's gilding the lily. The sandwich was delicious. I was not a fan of grilled cheese but all that has changed since I experienced the ultimate grilled cheese at Burnt Side Down. I have been craving them ever since. I had the "Send It" and it was amazing. I made two meals of it. I topped it with lots of Jalapenos. I can hardly wait to return and try the Pizza grilled cheese sandwich. Absolute yum! We tried the Original and the one with Gorgonzola. The Original is the Bomb! Oozing with luscious cheese. The Gorgonzola paled by comparison - it was good but had far less cheese. When I was in search of a crave-worthy grilled cheese, this place delivered! Their menu items of various grilled cheeses, both sweet and savory, were drool-worthy! I was so excited to see vegetarian and vegan options and alternatives offered so that myself and my group could all find something to our liking. The staff was charming and engaging, and put a smile on our faces despite any bad weather. But all weather is appropriate for a big grilled cheese and cup of soup!
