I have been working on my Dutch and our servers loved going back and forth related to words I didn't understand. They also let me practice. Extra points! Make sure to check out the bathrooms. Sounds like a wild thing to say but the art on the way there is spectacular and weird. Everything I can ever wish for. It's one of 4, two Michelin starred restaurants in Amsterdam and, supposed to the best of the best but, I struggled to figure out why. Nothing about the evening really made me think it warranted such a high star rating. The staff are very nice here and that was the saving grace to the evening. The food whilst sounded interesting and inventive was anything but. It was showmanship that lacked the wow factor. The best dishes of the night were the amuse bouche. I had almost all dishes prepared at the table and almost every dish had foam of some kind. I am sorry but foam is so last season, specially when almost every course comes with it. Wine list was ok but lacked decent priced wine options. The service was good but lacking the full attention to detail like specific instructions that were not followed or, failing to bring things without being asked or perhaps, asked twice. This is simply not the level one should expect in a place like this. The food was ok. I have never been to a Michelin restaurant where courses were sent back uneaten or staff failed to ask why we are sending something back. I found many of the courses too salty and the layout of the place did not easily facilitate table-side cooking. The vegetarian main of "cous cous" was bland and both of the people sent it back partly eaten. All three of us sent back the cabbage and my favourite dish of the evening was the sweetbread. The rest were unimaginative at best. At best I would give it 2.5 stars for the food and 4 for service. Value for money is a 2. I informed one of the waitresses when we arrived that it was my sons 30th. In any other place including my local Bavarian he would have got a small cake with a candle and here nothing. We did not even get offered the petit four as I had asked for the bill. In most such places we would have been sent away with a nice box of petit fours and so on and so forth. For what you pay for a meal here I just expect more. Pretty disappointed with the overall experience and we have been to tons of Michelin restaurants around the world.

From the wonderful view and attractive ambiance to the great service to the excellent wine pairing to the incredible food, it was the perfect experience. First, I'll start with the location. Without requesting a special seat, we had a nice booth for four with a wonderful view of the canal and a church. It started with some glare but the staff quickly noticed and lowered a shade, then raised the shade as the sunset so we could enjoy the view and the sunset. The restaurant itself was great, very bright and modern. The staff was also perfect. Our lead server (I'm awful at names) was incredible. She had recently moved to the Netherlands from Portugal (only here a month) but her English was great and her attitude better. She was friendly but not at all phones. She was quite attentive, whenever we needed anything she was there. She did a great job of describing each dish. Most importantly, she really cared that we enjoyed our meal, particularly my son (who is a little cautious in what he eats), doing everything she could to make the meal perfect. The food itself was great. Both my wife and I had the Inspiration Menu, the smaller of two tasting menus, my daughter had a vegetarian tasting menu and my son ordered a la carte. Everything on the inspiration menu was fantastic but I was particularly pleased with the multiple "surprises", small amuse bouche type dishes. It seemed we had a full meal before our tasting menu even started. I also loved the caviar with tuna and octopus, the turbot and pigeon, all were incredible. They tasted fantastic and beautiful presentation. The only problem with the restaurant is it will make future meals seem bleh, no matter how good they are. I will never forget this dinner.

As an ignorant American, I wasn't sure what table protocol and etiquette was, but seeing as there were menus already on the table, I invited myself to sit. A server came for my order a few minutes later. It was busy, but a couple (single) tables were available, and a few seats at larger tables. The mentality is such that if a lone diner walks in, he might just invite himself to one of the larger tables, or a staff member might do it as well. Nobody seemed to mind, and in fact probably made new friends. The salmon in dill sauce was exactly what I wanted! Really hit the spot, and comes with a glob of mayo... and I didn't even ask for it!!! Holland is my kind of place. My only comment, though I liked it this way, the salmon was basically still swimming it was so underdone. Not sure if that's the norm or if the chef screwed mine up... I ate it anyway boo hoo food borne illnesses shut up. I also invited myself up to the register to pay. Not sure if that was protocol either. Our main courses were a truffle stuffed guinea fowl with lentils and a white fish in beurre blanc with a potato cake and both had very interesting and flavorful sauces and tiny veggies.
