It's like a barbecue gumbo (but better than that sounds). It's so meaty, and yet the broth itself is this rich liquid which is like the essence of barbecue itself. It came with the best cornbread I've had outside of the United States (although I come from the UK which basically takes the opportunity to mess up cornbread every time I've had it). The pulled pork croquettes were also stand outs, as was just the overall service. Super friendly, and just chatting but in an unobtrusive way. Even though we were completely stuffed, we ordered the banana pudding. This was a very good choice, but I have to say that it's only the second best I've ever had. The first is Magnolia Bakery in New York, so frankly it's still quite the compliment!! Just so good. If I was in Stockholm longer, I'd be tempted to come back.

Judging from the food freshness, quality, taste to the attentive service and cool ambiance, Paul's has really made a strong first impression. Highlights/ Lowlights - let's start with the key differentiator of good BBQ, brisket. The brisket had good bark and was smokey but no smoke ring makes me think it was liquid smoke. It was cooked well but a cardinal sin was committed. The brisket was cut in the wrong direction making it stringy. - variety of sides and veggies were nice. Pickled items were good. Potato salad was unevenly cooked. - cornbread tasted good but fell apart in the hand -BBQ sauce and chipotle sauce were nice. BBQ didn't quite fall into Texas or KC style. It was thick but had a sweet and sour taste. Not bad but not Texas. - ribs were rough. Short little ribs that were over cooked. They weren't baby back. Just the small end of spare ribs. Or maybe they were cut. - fried chicken was good. It was thigh meat cut away from the bone. Tasted good but if you're looking for a traditional fried chicken, you'll be disappointed. - sausage was actually the highlight of the whole meal. It had a crispy skin and good flavor. I ordered the Arctic char (parsnip, chili, hazelnuts, browned butter and a soy glaze) and Paul G. went with the meatballs (hand-rolled and with cream sauce, mashed potatoes, lingonberries and pickled cucumber). We had the traditional Swedish meatball dish a few more times during the trip and they all came with the same components, but Bistro Bestick's was my fave. The sauce was heavier, velvety and creamy, and the potatoes were oh so fluffy. The berries were tart and fresh.
