While at first I chose to substitute a portobello for the burger, I then asked if he could add beyond sausage instead. He got to thinking, and creating, and ended up assembling probably the best sandwich I've ever had at a food cart. Combining just about everything he had on the cart, Jim assembled for me, on the spot, a sandwich with beyond sausage, Morningstar bacon, greens, grilled peppers, portobello mushroom and fabulous sauces on a pretzel bun.
