We went to Bridget with a brief that was wide ranging but specific in "dislikes". I wanted a 3-tier wedding cake that did not include biscuit or fruit cake and didn't have rolled icing and buttercream off the menu as a filling option. While Bridget was surprised that I didn't want the same as pretty much all brides in Ireland today, she was excited that she had a little more scope to play with.
For our tasting evening, we went in and she had asked us what type of flavours we liked. We had asked for citrus flavours, but said generally we were open to something different that might work well.
We ultimately decided on chocolate cake with orange filling; white chocolate and raspberry with a raspberry mousse filling and, lemon cake with a lemon curd and lemon mousse filling. Bridget knew that my husband didn't like the "buttery" taste of butter cream and suggested that she could use american-style butter-cream as our cake coating and was very open to trying various styles. We wanted to keep it simple.
I was so impressed with the whole service. Bridget was unassuming, so helpful and the cake tasted amazing. Really amazing. So much so, living in Dublin, it would be my preference to travel to Wexford to actually get all my future big-occasion cakes because the quality was so great. read more
