I was told the chef was from Tianjin, and it shows in how some of the dishes that are derived from dishes from Sichuan and elsewhere in China vary, such as a tendency towards more bean paste flavours, and less bright, clear, savoury spice; more muddy and salty, and not in a bad way at all. They are hesitant to make some of the Chinese dishes for non-Chinese customers, because they have had bad experiences with Canadian customers ordering things and then not liking them. Know what you're ordering, or at least be willing to accept and try to enjoy anything you get, without complaint. Of course, if you know how you want something made, tell them. Their chef is appropriately skilled to deal with such requests. Many thanks to the person at T.T.
