Update from previous review:
I had to subtract 2 stars and I'm not sure they should get one. I finally stopped back in (5 months later) and personally I think it's not better, maybe worse. Heat is way too hot for level 2.Curry sauce is almost solid and rice very mushy. On a good note veggies were nice & crunchy and there was eggplant. But I think I'm just going to find a Thai place that is consistent in their recipes.

I eat takeout here often because it's convenient. Over the last few months, it's just become a little more disappointing and recipes seem to vary for the same dish on different days. I thought about giving another star due to pandemic issues, but here's the thing. How about just saying you don't have something and giving a choice of replacement?
I ordered Green Curry and instead of Japanese eggplant there were sliced carrots. That's kind of a big deal. Also I'm pretty sure the green in it was lime leaf instead of basil. These affect the flavor.
The other disappointment is the heat. You never know if the heat number you order will be hot or medium. That shouldn't change.
The vegetables have always been crisp & fresh tasting but lately they are almost too soft & overcooked. Even in the noodle dishes which have less & less sauce.
I don't know if it's an issue with the cook or problems getting things, but I do know that people should know what to expect from a restaurant they visit regularly. This isn't the only Thai restaurant around and definitely not the only one I've eaten at. I'd like to see them succeed, but I'm pretty set on enjoying the food I eat.
