I don't recall being told the name of the oysters or their origin
    Joanne V.

Blue Water used to be one of my favourite fine dining restaurants in Vancouver. I went there often when they first opened about 20 years ago, the food was still good as two years ago. Unfortunately, my experience a couple of nights ago with my girlfriends was very disappointing. We started with the raw oysters. They were noticeably larger than usual, so I made a casual comment to our server. Our server simply shrugged and responded, "so, are you okay with it?" with no explanation. The response felt insincere, and overall, the oysters were not as good as as I remembered. Later, I tried the complimentary dinner rolls and found them rock hard. I flagged down a gentleman in a suit to let him know. He replaced them, but did not apologize or acknowledge the issue. The fresh rolls were much softer and clearly better. The lack of acknowledgment made the interaction feel dismissive, as I were viewed as a picky customer. Throughout the evening, our server was attentive, but the engagement didn't feel genuine. We may not have been big spenders, but respectful service should be consistent for all guests. There are many excellent restaurants in Vancouver, and dining out is about the overall experience, not just the food. I hope management will provide additional training to ensure servers treat customers with professionalism and care. Unfortunately, based on this visit, I will not return. Also, I noticed on Google reviews that management responses appear to be limited to positive reviews, which may give the impression that negative feedback is not being equally acknowledged. Bummer.

We had our New Year Eve dinner at Blue Water cafe. The place was lovely with great service and food. Our waiter did a great job explaining the menu and gave us great recommandations. The seafood options are amazing. Really loved the seafood tower, lots of food to try, a nice option if you are sharing. We also add some sushi and rolls as starters. Probably should have ordered less as it was only two of us but everything was great. As a main we shared the elk stirloin. That was amazing ! Best of everything we tried. Also can say that their cocktails are very good. I really enjoyed the Sakura. We will be back! Happy New Year!!

Absolutely still loving this restaurant especially their amazingly fresh raw oysters!! We got a dozen and next time I'm going for more! I got the seabream fish and it was delicious! Not fatty and fish was firm and deboned for me. The short ribs had a thick glazed sauce that I did not like so I would not recommend the short ribs. Definitely will come back here every time in Vancouver.

Our server was great! No baseball caps so apparently it's a little fancy but not over the top fancy. Everything we ordered was really good. The seafood tower was really fresh!

Great service from the get-go. Food was excellent. Seafood plateau was everything you would expect and hope for, but the steak was also perfectly done, and pasta seemed to be handmade. Cocktails were also well crafted and well proportioned. Our server was fantastic- very attentive and had a message on our dessert for our anniversary. Ambiance is very classy and there is a dress code. Highly recommend.

They have the plumpiest oysters here. Highly recommend they have to get Effingham and Evening Cove. They were sooo delicious and they're local! Our server was so kind, friendly, patient, and helpful. They have top tier service here. The restaurant is very high quality. My water was never not filled. Their table bread was also so tasty. Their burrata and prosciutto was delicious and I usually don't like burrata but they also had a pesto crunchy piece of bread that paired so well with all of the flavors of the dish. For my main I got the scallops but was eyeing the sablefish. I'm so glad I got the scallops because there was so much flavor in that dish!! And I ended my meal with sorbets (strawberry, banana and coconut) mixing all three together was sooo good. It was the perfect apartment and didn't feel too heavy. I really enjoyed dinner here. I highly recommend trying this place out! You won't regret it!

    This is the Sablefish selection.

This will be a hard review to write only because there will be some that will think I am a plant ( My wife and I are from another country.) as the superlatives to describe our meal will be nothing-less than excellent. (Note, When visiting Vancouver City and all the great dining venues here, we always make certain to have at least one meal is here.) From making reservations ( which we asked to change, and were accommodated) to arriving early and enjoying a fantastic beverage, to the fantastic meal ( our photos do not show the several orders of perfect Sushi (Nigiri and Rolls) ) to our amazing dinners, to the perfect way to end the evening with a delightful dessert. The restaurant setting is an example of how a fine dining restaurant should be. ALL of the staff comport themselves with professionalism and pride, for which we are grateful. The flavor of our mains were exquisite and we had such a wonderful meal we cancelled tomorrow nights dinner ( at a 5 star restaurant that we dined at last night ) and will return to the Bluewater Cafe as we spend our last night in Vancouver. If you have not dined here , please give it a try! Cheers to all! And thank you to Bluewater Cafe!

Exemplary offer business lunch. We hopped in a cab and were given a round table near the entrance for seven people. The service was impeccable and our waiter made sure to top up our glasses with wine or water. I started off with a delicious carrot soup. Most of our table ordered the scallops so many delicious scallops all on one plate great decision. We finished off with the very rich for a Valrhona chocolate cake. Can't do much better in Vancouver.

We went to the restaurant nearing their kitchen closing time and the hostess was not very pleased especially because we had a decent party size BUT they accommodated us exceptionally and we are so grateful for it! Our waitress was phenomenal and so on top of it all! She helped us narrow down the menu and pointed us in the direction of things that were well known at their establishment. This was super helpful for us! The restaurant was such a cool vibe with a bunch of different stations on the outskirts of the room, one being the sushi making station which transported me back to my omakase experience in Japan last month. The food was phenomenal and it was gone quickly. We loved it all and would highly recommend for anyone who is in need of a great sushi restaurant!

Hands down the best meal we had in Vancouver! The experience was above and beyond from the start to finish. It is remarkable how incredible the food was and the RANGE of dishes! From sushi to truffle pasta- 10/10. Our server, Kristoff, was a delight and his wine recommendations were superb. We will be back!

Yes the restaurant is expensive but it offers some of the freshest seafood I've ever had! Most of the items on the menu you can skip but the seafood tower is an absolute MUST!

    Dessert

The food was delicious! Service was amazing. We sat near the expo kitchen. Cool to watch them put the food together. We had desserts and an after dinner lemon drink! So good.

seafood is so so fresh it's definitely worth the price tag, was worried about the portion of the seafood tower for the table as my party are seafood fanatics. We ended up being super full! Server was also super attentive and explained all the items patiently

I left my water and soda to drink them later after heading to washroom. Staff cleared my water and soda away. I still had half of soda in it. I felt thirsty after eating my food in the end. From the gold railings to coat check to a piano on the stairs to an old school oyster bar showcasing their wares proudly on display, Joe Fortes has a lot going on for it. But perhaps more so than anything else is an amazing happy hour for anyone who loves oysters. Service Before diving into the food let's talk about service. The servers here are dressed in the old full whites with black ties and give you full service. They have an expert knowledge of the menu and are willing to give you any and all opinions if asked. They check on you frequently and make sure you're having a good time with enough banter to make it friendly and welcomed. Happy Hour - Alcohol With that out of the way, we can talk about the happy hour. Yes, they have a great deal when it comes to their house red and white wines where you can get 6 oz for $6 CAD or 9 oz for $9 CAD. Their beers range from $5 CAD to $8 CAD and their cocktails are all under $10 CAD. Happy Hour - Food They have some incredible truffle fries, cut thick and sprinkled with parmesan as delicate as snow for $9 CAD. Their crab & corn fritters are slightly chewy but packed with flavor and come at $12 CAD. The coconut prawns sound just as delicious as they taste and come at $13 CAD. I would avoid the Steelhead ceviche though as it was more mashed avocado than ceviche. However, HOWEVER, the star of the show are their oysters. Coming at $1.75 an oyster, you get to be as gluttonous as you'd like whilst keeping your pockets happy. Vancouver is known for their amazing seafood and with this happy hour from 3 PM - 5 PM it gives you 2 hours to fill your belly with as many oysters as you can. Even if you ordered 50 oysters you would be under $90 CAD. I should know, I did that. Last Thoughts Even without the incredible happy hour Joe Fortes would be a restaurant you have to visit during your trip to Vancouver. With a great selection of food on their menu, wait staff that feel old world and professional, and a setting fit for the city, the happy hour is just the bonus that makes visiting Joe Fortes even more enticing. Come with an appetite, leave with a smile.

Steep as it is, I decided I wanted a "quick little sushi lunch with a view", and a quick little sushi lunch with a few is exactly what I received. Although I don't recommend it, I walked right in from the street, no reservation, and was seated at the bar (in pretty casual street clothes I may add). I enjoyed a premium sake flight (which was fine...just fine), an old fashioned served with the perfect accompanying dark chocolate, and a good amount of sushi including their signature aburi style sushi in flight form and nigiri tuna flight (bluefin, chutoro, otoro). After visiting Japan last December, I'm a bit of an otoro snob but I have to hand it to them, all three of these cuts were perfect. The accompanying rice, perfection. The quality of the fish, divine. The view was the cherry on top of this experience. This will certainly be a spot I revisit next time I'm in Vancouver.

An extremely large prehistoric claim that you need special mining tools to get to and is only available on the west coast. The Gooey Duck tasted like a soft clam. Not too chewy, and full of crisp flavor. I also was lucky enough to come during happy hour, so I tried the periwinkles and escargot for fifth-teen dollars each. The escargot was not what I was expecting as I only ever had it before in French restaurants where it is served basically in a ball shape covered with butter and garlic, the escargot here were very small and you had to get it out of the shell with a toothpick. After researching snail, I understand there are three different types of snail you can eat. This one is much different than the one if find in French restaurants, but I am glad I was adventurous and tried it. The Periwinkles I liked more than the snail however these were even harder to get out of the shell and you have to really stab and twirl to even have a chance of getting them out of the shell. We probably left over half in the shell. Pro-Tip : Get the jade conch! They gave me two complimentary as they knew I really wanted to try it and not have to order three entrees and a main entree to try everything I came here for. Thank you very much Shellfish Shack, as I loved the Jade Conch and would definitely get this again in the future. The conch were very large and came out of the shell fairly easily. They had two distinct flavors as you reached the bottom of the jade conch, they were more succulent and flavorful, the top portion of the jade conch was a bit spongier and chewier, but I liked these by far much greater than the snail and periwinkles. The girlfriend got the scallops, and they tasted sweet and delicious. Now if you're not sold yet on the place they have a fun game you get to play with the purchase of any beer. You crack off the cap on a pinko looking board and if the cap lands into one of the slots you can get free oysters or other free goodies. I ended up getting two tsing-tao beers but got the try again maybe next time slot both times : ) Great different experience, highly recommend! As always people SYOY!!!
