I really appreciate that you can "mix and match" menu items, choosing a broth, noodle type, and toppings from different parts of the menu. We got original tonkotsu, and Yuzu shio but with vegetarian toppings. Noodles are just the right firmness, and the broth is well balanced, not too rich, not too salty. My boyfriend said the black fungus in his soup tasted stale. I enjoyed my soup and toppings but wished there was more besides charsiu and scallions. The egg was excellent!
