Billy's in Lafayette is one of those places I have to stop at every time I'm passing through. It's become mandatory at this point. We tried a few different bites, and everything was exactly what you want from a spot like this -- flavorful, fresh, and satisfying every single time. Food: The food is really the main attraction here. Nothing overly fancy or trying too hard, just consistently good food that delivers every time. Everything we tried was solid, and it's the kind of place where you already know you're leaving happy before you even order. Service: Service was smooth with no issues at all. The staff kept things moving, and the experience was easy from start to finish. Ambiance: Billy's has that classic Louisiana stop-through feel to it. Nothing extravagant, but it doesn't need to be. The food speaks for itself. Overall: Not much to rave about besides the food -- and honestly, that's all it needs. I was super excited for this place because I haven't had boudin in so long. I got cracklins, Billy's Boudin and the smoked boudin. The cracklins had a little bit of fat and meat on them which I wasn't used to. I'm just used to the fried crispy skin. It tasted more like fried/seasoned pork belly. The seasoning is really good though. My favorite boudin was Billy's more than the smoked one but my fiance liked the smoked flavor more. I wish we took pics but we just ate it in the car. The casing was a little tough to bite through so I sliced it and scooped out the insides. Although the Billy's boudin is good, I don't know if it was good enough to drive from Texas for it. When we stopped at Billy's it was absolutely packed... That's usually a good sign. In this case they mostly lived up to the hype. There was a constant flow of people coming and going, grabbing food to go, chatting and everyone seemed to know exactly what they wanted except us. After a while, we basically just decided to get one of everything and try a variety of items and flavors. Everything was deep fried, so at a certain point the tastes all seemed to mesh together. Some of the cracklins were a little rough and dry for my taste but my husband enjoyed them and the his favorite were the jambalaya balls. I actually liked the corn lagniappe and most of the boudin balls, with the red beans and rice ball being my absolute favorite. This is definitely a grab and go type experience and not a sit-down one. And with the crowd it felt a little hectic. But if you're passing through the area and you want to try some classic grub that the locals clearly love, I would recommend to stop here. read more

Billy's is definitely one of those must stop shops to visit when in Louisiana. Its been a few years since i've had there boudin but overall it tasted the same! The flavor and meat to rice ratio on the boudin is perfect and I love the crust, but I can say you must eat them fresh or else you'll need to reheat in the oven or airfryer because the crust does get chewy. My only complaint i'd say is that I wish they offered a mild boudin because even the original boudin has a bite to it that can be overwhelming to those who are sensitive. Other than that, the boudin is really good along with the crawfish boudin. On this visit I even tried the fried corn out of curiosity but I wasn't a fan. They even have delicious chicken and pork cracklin but if I had to choose I'd definitely pick the chicken cracklin! Overall, I'd recommend so give them a try, you won't regret it!!! read more

When I walked in and saw the line but nobody was complaining, I knew I was in the right place. I ordered a crawfish boudin ball, a shrimp boudin ball, fried corn, a shrimp roll up, 1 lb of the chicken cracklins , and 1 lb of the seasoned pork cracklins. My favs were the fried corn, the boudin balls, and the seasoned cracklins. The seasoned cracklins were so meaty! Everything is best eaten hot. I am glad that I do not live close by. read more

We stopped for lunch on a Sunday, and the wait must have been hours, so we left. We tried again on a Friday around three and the wait was manageable. They have a bunch of crawfish and shrimp items, which I adore. There is no seating, so plan on eating in your car. It's so worth it. read more

The drive through and inside was packed and we all know why! I had tried several items before including the pork cracklin which is a must. I was traveling with someone who doesn't eat pork so we asked about chicken cracklin and the lady behind the counter highly recommended it. It did not disappoint! Stopped in on the way back home to Texas for some Cracklins and smoked boudin. Service was quick. Only 30 minutes before closing and everyone seemed ready to go. Country store ambiance. Quite a bit of variety. Cracklins were high $$$ per pound but ended up getting a pound for the road at $24.99 a pound. Smoked boudin link was delicious but not as big as they used to be. Boudin egg rolls were delicious as well as the boudin balls with and without cheese. I Spent over $125 dollars on a variety of items since I haven't found anything close to home like these but I don't think I will be stopping by anytime soon if at all. Everything is too high. Yum! I've never tried boudin or crackins before. This place came recommended by a LA native. We happened to pass by and stop for gas at the Chevron station it's attached to and I remembered someone had recommended Billy's cracklins so we decided to give it a try. When we went inside there was a long line for the food. We debated waiting, but I'm glad we did. The boudin was interesting and so good - looks like sausage except it's like a whole meal on the inside. It's basically seasoned rice and pork with lots of flavor encased in a sausage casing. The crawfish boudin ball was perfectly crispy on the outside and deliciously gooey on the inside. Kind of like a thick crawfish gumbo that's fried. Of course we also had to try the cracklins - I would say they are a heavier version of pork rinds, hearty, crunchy, and melts in your mouth. So addictive! We devoured a whole bag within minutes. I'd just eaten lunch 30 minutes before, otherwise I definitely would have gotten more. I will say I am glad this place isn't closer to me because I would eat here too often and it probably isn't the healthiest choice. Definitely worth the wait if you're in the area. read more

With a reco from local colleague John C, I decided to give Billy's a try. Glad I did. Lunch was 1 pepper jack and 1 crawfish boudin ball. For $6, an undebatable bargain. Worth twice that. For those unfamiliar with the cuisine, boudin is the meat and rice sausage found in this area. (Think New Orleans is wheee the Cajun food originates? Think again.) Cracklins are fried fatback. Think pork rinds, only fresh. I was in and out and back on the road inside of 10 minutes. Inside...nothin' fancy...I wasn't there for the scenery. Billy's has 4 locations now. Decided to stop and try what seems to be a Louisiana favorite - Chicken Cracklins & Boudins. There were many places that serve these favorites along our route and we relied upon our fellow Yelpers to pick which one. We went through the drive thru which went quickly and the lady at the window helped us with some of our questions, being our first time in trying this state favorite! We decided to try the Pepper Jack Boudin, Chicken Cracklins & Fried Corn. The Pepper Jack Boudin was seasoned and fried to perfection on the outside while moist on the inside with a burst of melted pepper jack cheese in the middle! We read from a fellow helper to get the Dat Dip sauce which we agree added the perfect touch to dip them in. The ranch was not impressive and would not request that in our opinion. The Dat DIp is similar to Cane's Chicken dipping sauce which we love as well! The Chicken Cracklins were fried to give you the perfect crunch with each Cracklin bite! Fried in the same seasoned batter as the Boudin, so good flavor! The Fried Corn on the Cob was just okay. It lacked seasoning even though it seems to be in the same batter. I was hoping to have the Corn Boudin like we read about, but did not see that as a drive thru choice when we arrived. Perhaps we missed seeing it. Used the drive-thru for a quick bite. The stuffed boudin balls were outrageous! We got some plain boudin and fresh crackling too. Definitely worth the stop but allow time because EVERYONE knows about this place so the wait is a bit much. Service was good. Friendly amd they take their time with your order too. The lines were long inside and in the drive thru. We went inside. Bathroom was available but not the cleanest. The store is clean. The service was passively angry because the place was very busy Festival weekend. It was my first time visiting Billy's. The chicken "crack"lings were amazing. I tried the cooked boudin, seasoned crackling, salted crackling,, fried breakfast roll, fried boudin balls, frozen breakfast sausage, smoked boudin(frozen) and Tasso (frozen). The fried items are very greasy. The fried balls, rolls etal soaks the brown paper bags with grease. The smoked boudin didn't have much smoke flavor. I highly recommend the frozen breakfast sausage, all the cracklings and cooked boudin. I will visit again for the fatty meaty crunchy cracklings. read more

Both the chicken crackling and pork crackling was so freaking delicious, lol! Because it was very salty, I could not eat too much of it. The crawfish rollup resembles an egg roll, but instead of cabbage and meat filling, it's stuffed with crawfish and a jambalaya flavored type of rice. The crawfish boudin balls and fried corn cob were equally delicious! Hands down, the food is delicious but way too much salt for my health. I felt myself getting a headache at one point from trying the different menu items. The taste tasting experience became unenjoyable...smh I highly recommend this establishment to those who don't mind eating salt at such an enormous volume. However, I cannot see myself making this place as one of my to-go-to spots when traveling to Louisiana. If their menu offered healthier choices such as unsalted crackling or some type of healthy salad or veggies, I could definitely see myself returning. The menu consists mainly of salty and greasy fried foods. Not my cup of tea! Be aware of the long lines inside and in the drive-thru. They only had three cashiers checking out the customers. Hubby and I were in line about forty-five minutes before we reached the front of the line. The staff were not welcoming and friendly. Two works CHICKEN CRACKLIN. I will trade my oldest child (he's. Lil shady lol) for an unlimited supply. SO flavorful, perfectly seasoned and fried. Also the shrimp rolls, crawfish rolls, crawfish boudin literally EVERY single thing that we ate was full of flavor. The rolls have the holy trinity, rice, crawfish, and other seasoning. They also SHIP, the service is amazing, and the ambiance is "mom and pop". Loved it. Again I'd trade my son so I definitely would come back. read more

We have thought for many years this is the best place for boudin and specifically the boudin balls with pepper Jack cheese. This time they were not piping hot and seemed to have been sitting there for a while. Perhaps the cooking batches are too big? So now it's time to try others... And that we did.
