Our food was excellent. I chose to do take out. They were busy but staff was pleasant.

The hardest thing about BBQ is consistency. That's why you don't see a lot of successful BBQ chains. That challenge raised its ugly head here. While I've had good BBQ at the tiny Chanute KS location, this location on this visit was almost a complete fail. Two stars are for friendly service and cleanliness. Here's the food run down though... Brisket- Dry. Absent of seasoning and smoke. Not worth eating without lots of sauce. Ribs- Absent of seasoning and smoke. Texture was fine. Again... needed sauce or it was just plain and meh. Slaw- Watery and without an zip/zing/seasoning. Corn- Slightly smoky but way overcooked. Unpleasant in texture and appearance. I could not eat more that a couple of bites. Beans- Basically canned beans with some flavorless pulled pork added. Didn't finish those either. By the way, a previous reviewer notes that meats are wrapped in plastic before portioning and serving. If you have every been to any BBQ place that is top notch, this is how most of them retain the juices and hold the meats at serving temperature. Unwrapped, they'd quickly dry out and we'd all hate BBQ. Of course, the meats here were STILL dry, so I have no idea what they are doing here... and apparently neither do they. read more

Great food and great service as always! Driving through Kansas during Bedlam and was thrilled to see Billy Sims BBQ. Surely they were showing the OU v OSU game that was live, considering the place is filled with Sooner memorabilia and photos of its namesake during his years at OU? Nope. Country music videos. This was the second time in a week to visit a Billy Sims location. Today's (7/26/21) visit here in Hays was not as good as the previous location we went to. The chicken did not present well and was very very dry. I did not eat it and feel like the staff member should have known better than to serve it once she sliced it. The Turkey was okay. I asked the staff member about the seasoning, and she said it goes on all the meat after it is sliced. However, she did not put the seasoning on the chicken and Turkey meal. The mini corn cobs my husband and I got looked old and shriveled up, with a brown discoloration. Again, the staff member should have known not to serve the corn. We did not eat the corn. The Mac-n-cheese was yummy! The restaurant was clean. read more

My wife and I travel back and forth from Virginia to Utah twice a year. This restaurant is our favorite stop on the four day trip. She lives the pulled pork sandwich. I love the sliced brisket and the polish sausage. Best we've ever eaten. Never disappoints. We also enjoy the cole slaw and loaded potato salad. I wish they were all over the country. I was really excited to try some Billy Sims. I walked in for dinner, 2 folks ahead of me in line. 5 employees working behind the counter. My mouth watered looking at their brisket tacos. After 10 minutes no employee had acknowledged or even made eye contact with me. They were slicing and packing these giant party packs. I had no idea how long this would go on, it felt awkward, and I left. Went to Fuzzys across the street, crowded, no masks on anyone, so started back towards Billy Sims to see if party packs were done. Nope. Noticed they had a drive thru so tried that instead. I was promptly greeted at the drive thru, ordered, and I was well on my way to those Brisket Tacos! Unfortunately, the van in front of me had a big order or something, and 15 minutes later, I'm still in the drive thru. I'm over 1/2 hour into my food quest now, unacceptable for me on my 15 hour road trip. Drastic measures needed to be taken and I had to abandon Billy Sims for the second time that evening. I engaged my 4wd, drove off the rock embankment next to the drive thru and headed to Wendy's. 7 minutes later I left Wendy's and the van was still parked at the Drive Thru! Billy, I tried! read more

As a truck driver you hear of all these great restaurants to visit, however there's not a lot of places for you to park your big rig and go in and have a good meal. I just wanna say I had lunch at Billy Sims barbecue in Hays Kansas, and everything I was told about it was true. I had a full rack of ribs in the meat just fell off the bone so much seasoning, in flavor, I decided to get a pulled pork sandwich for the ride home. And I also bought his famous barbecue sauce which is delicious. There is a place to park directly behind Billy Sims barbecue if any of my fellow truckers need a place to park. This was my second time and still a total let down. The meats were ok when you got enough sauce on them (I very much enjoyed the spicy sauce). My first clue to leave should've been that all the meats were wrapped in plastic wrap. I'm sure there's a reason but it looks very fast food like to see. Side dishes are terrible. There is a way to screw up potato salad and they found it. Baked beans tasted like they came from a can. Should've used Bush's if you're gonna do that. Too it off with terrible service. Last time wasn't horrible but certainly not great. Today it staffed with 4 ladies (and I used that term loosely) and 3 of them were colossal B$&Ches. My advice, skip this one. Solid BBQ lunch here today! I had the two meat combo with ribs, chopped brisket, baked potato salad and Mac-n-cheese. My wife had the chopped brisket sandwich with the baked potato salad. The brisket was tasty and had good BBQ flavor, as did the ribs! I thought the Mac-n-cheese was a little thick/rich for my liking, but my wife really enjoyed it. We both thought the baked potato salad was quite good as well! As with the best BBQ places, Pepsi is served here and they had a good 'mix' that tasted good! Traveling between Illinois and Colorado, I have stopped at this Hays location previously and had a good experience, however, today was not very good. We arrived closely after opening time with only one other customer present. Despite the staff not appearing busy, the women's restroom needed cleaned and it was without soap, and the condiment/drink area looked as though it had not been cleaned for quite some time. When I came out and let the man, (whom I thought was the manager), and the woman beside him know the soap container was empty, she said thanks, but her face did not reflect her words. Also, upon arriving we were not met with a warm greeting by these two, only one asked what what we wanted basically; no smile, not friendly at all, leaving us thinking they must really dislike their job and perhaps should find another one. When leaving, neither thanked us or even bid goodbye. As for the food, the brisket was good and the macaroni and cheese very good, but the green beans lacked flavor. Whomever was managing today, 01/01/2023, they need further training because my previous visits were not negative. A simple, "Happy new year", might have sufficed if a hello, thank you, or have a nice day was too much to ask. read more

After several friends and an employee of Billy Sims read my original review and "encouraged" me to try it again, I gave-in. I decided to go for the Premium Meat Dinner...all brisket. Let's start with the sides. Any decent BBQ joint has got to be able to produce baked beans and coleslaw flawlessly. Billy Sims has certainly met the standard. I found the coleslaw very tasty just the way I like it not too wet not too dry. The baked beans were impressive. They managed to get the right flavor and consistency. The Texas Toast could have been toasted just a tad longer; however, the bread was TOTALLY FRESH unlike other places who use day-old bread. Very impressive. I really liked the brisket. It came sliced very nicely and I'd have it again. I took the hot BBQ sauce. Not a 5-alarm fire, but a solid performer. I'd go back and might even try the ribs! read more

Driving from Castle Rock to Tulsa. We had 3 places to check out in hays and all 3 were either closed or 'gone' ~ yes it was 4 pm on a Sunday and super bowl to boot. Saw this bbq restaurant ~ 10 star counter gals. Kind helpful knowledgeable and efficient. We shared the rib plate w 2 sides. Enjoyed every bite however guilty as ever as we are coming off the 30 day challenge NO sugar. Heloooo sweetness and guilt we still enjoyed every bite. Traveled all day and was spending the night in Hays. Needed a quick takeout meal, and this seemed like the right place. Really disappointed, and was unable to finish the meal. I asked for the brisket and the sausage. The brisket was dry and tough, and the sausage looked like standard kielbasa you can buy at the grocery store. The sausage was barely warm. Sauce was provided in factory-made containers (obviously not on site) and the Texas toast was grilled on one side and not the other, and had no flavor whatsoever. The portions of cole slaw and mac and cheese were less than a child would eat. The meal was pricey for what I received, and quality was really lacking. Stopped by after traveling all day. Family really enjoyed all the items we ordered. My 5 year old actually loved the Mac and cheese, he never eats this anywhere else. So we thought being in Kansas we get some bbq. Saw a sign for this place and thought why not try it. It had 4 out of 5 stars and mostly good reviews. Sadly the one 2-Star reviewer was closer to being correct then any of the other 4-5 star post. Brisket was tuff. Tuffer then a over cooked well done steak. Turkey was okay and sausage was the only decent thing. The green beans were canned, and coleslaw tasted like KFCs coleslaw. The only other thing other then the sausage that tasted good was the loaded potato salad. Can't say I'd waste your time and money here. And Tina W. Instead of telling me what you "say you do" take the criticism and apologize. You can smoke the meat on site but doesn't change the fact that the meat was as tuff as chewing on a shoe. My husband and I went to this place mainly because it was walking distance from our motel. You order at the counter. We got the 3 meat plate to split. We got sliced beef brisket, smoked chicken and pulled pork. It was all very good. For sides we got potato salad and Mac and cheese. The Mac and cheese was good but the potato salad was awesome. My wife and I walked up to the counter and she saw 2 live roaches crawling across the cutting the cutting board. We walked out...

First off, this place is in a strip mall called *Tebo Village" the namesake comes from the owner who's last name is Tebo. He has long been known to the locals as a collector of abandoned buildings and now he's creating them. the main part of this building still hasn't been rented and they built it like 5 years ago. The restaurant on the adjacent lot went under some time ago. I have a feeling that the only reason the other businesses are still here is because they are overseen poorly by large corporations that are used to outrageous rent usually found in larger cities and aren't on the ball enough to realize how bad they're getting bent over. I love BBQ....even when it's bad, it's usually better than most other options and that's the way this place was when it first opened. Billy Sims is a chain and therefore my expectations were pretty low but they always exceeded them. That being said, I don't be think whoever is in charge gives a f*ck. Every time I come here the menu gets smaller. They used to have chili -always a solid option if you're distrustful of how the meat on the other customer's plates is looking that day but now the chili is "seasonal". Last time I was here I noticed they had nachos and that sounded good today so I stopped in. The first person you see is the meat guy. He doesn't even acknowledge me for several minutes as he seems frustrated by a "to go" order he's working on. Finally he asks "what can I get you?" The menu doesn't specify a meat on the nachos so I assume I get a choice but he doesn't offer one, just starts grabbing at a hunk of meat and it's pork. I don't particularly care for pork but that's not the biggest problem -this stuff is looong and stringy -like 6 to 8 inches long...how are you supposed to eat nachos with 8" strings of pork in them? Does this kid put any thought into his job? Would he do that if he made them for himself? There wasn't much of anything good to say about the rest of the nachos either but I'm not gonna get into it. Fast and decent BBQ. Door-Dashed this place after a flat tire got us stranded and it did not disappoint. We had our food delivered to our hotel within 10 - 15 minutes of ordering! My husband and I were traveling through Kansas on our way back home to California and needed gas and a break from the road. We didn't feel like fast food and this was a restaurant that was not familiar to us. Liking bbq, we gave it a try. We found the servers to be friendly, the place was clean, including the bathrooms and the food was tasty. Contrary to some people's reviews, the brisket was tender, as well as the pulled pork. Not sure where they do their smoking, but it was as good as some name brand smokehouses. read more
