Ordered half a rack of ribs and pulled pork for my date. Half rack was 8 ribs of meat, outstanding! Pork & beans and potato salad were excellent. Ribs were pull off the bone great flavor, smoky sauce really brought out the flavor. My date doesn't like sauce, sometimes that means the meat will be dry, but it wasn't. The food is okay. The ribs fall off the bone but service is not that great..... they didn't put any silverware in my bag they asked me if I wanted barbecue sauce and I said yes... They didn't put that in my bag then I'm a traveler so I'm already on the highway 10 miles away... On top of that I opened up my food containers and there's just no they're not filled to the top so if I had gone in and sat down they would've given me twice as much portions on the side items that's what they gave me to go so I don't know why I'm paying full price on to go orders if I don't get the same amount of food. I guess it's because they have teenagers working there and they just don't know any better or they're just trying to skim but giving me a half full container... Hidden Gem! We do not have this chain in Colorado. My wife does not like bbq but really enjoyed this place. We got there right when they opened. Staff was very friendly and went over the menu with us. We got a single meat plate and a two meat plate. We got brisket, chicken and turkey and sides we got beans, potato salad, Mac n cheese and coleslaw. Everything had so much flavor. It was really good. Definitely recommend! read more

Having lived in Texas for 13 years with my husband (a Texan), and having been introduced to the wonders of BBQ from people who smoke their own meats, it's HIGH PRAISE when my husband says, "These are the best ribs I've ever had!" He specifically praised the dry rub approach and the moisture-rich tenderness: "The moisture comes from inside the meat, not from slathered on sauce." We were on a roadtrip recently passing through Hays, KS. We stopped for a quick bite to eat at Billy Sims BBQ. This was our first experience eating at this chain. No one was in the restaurant, which should have been a clue, but we gave it a shot anyway. The brisket and turkey sandwiches were just ok. But, the green beans were horrible! My husband and I were traveling through so we bought a platter. It lasted us for three meals. It was absolutely delicious. The ribs had so much meat on them and were cooked perfectly to where they fell off the bone. The brisket was amazing and all the sauce was very good. The portions were generous. Super disappointed with our order. We paid for food to feed 26 people and barely got enough for maybe half of that -- it honestly looked like food for about 13. For how expensive it was, this is unacceptable. We ended up scrambling to figure out what to do because the portions were nowhere near what we paid for. Came here after an unsuccessful attempt to go to Fuzzy's next door. Boy, am I glad that Fuzzy's didn't work out because this place is DELICIOUS! I went through the drive through and the girl- I think her name was Leah- was so nice and cheerful! It took a few minutes to get my order but that is okay because not only did she apologize for the wait but the food was well-worth waiting for! AMAZING! The tacos- brisket and pulled pork- were overflowing with ingredients, the queso and BBQ Ranch sauce are so good, the mac-n-cheese was creamy and yummy, and the sausage sandwich was great! On my way to Colorado i saw a sign and waited 30 miles to try this. it a nice clean place, till you wash your hands . bathroom looks like it needs a good cleaning and door doesn't lock , Bar B Q - is okay at best . they were out of macaroni and cheese. brisket was ok . i make a lot better and i'm still learning. pull pork as ok to. beans we out of a can . i would not eat here again because it's not worth 25 bucks read more

This is essentially the Moe's or Chipotle of BBQ. For fast food BBQ, it wasn't bad. The brisket was lean and had flavor. It was a bit dry, but sauce solves that! The pulled pork was moist and had good flavor without sauce. The ribs were tender and were ok in flavor. The turkey was SO salty! For sides we had baked beans - they tasted just like Bush's from the can. The green beans were terrible!! I thought they had no flavor but my son said that they tasted like school green beans. If I lived near one, I might go periodically. It is sufficient if you're looking for a BBQ fix but if you have legit BBQ close, I wouldn't waste your time. read more

Got food 15 minutes before they closed and the staff was very friendly and the food was great!! Plus they have very delicious desserts!! It's always so clean, even the bathrooms, they even had several types of BBC sauce on all of the tables. As always we have been very happy with them. One of our favorite places to go. My husband and I are from the south. We love barbecue. We were in the middle of the country as in Oklahoma and had a craving for barbecue. We discovered this restaurant chain and as we drove from South Carolina to California we would always yelp to see if there was a Billy Sims in the town we were going to. Don't get the small portion get the big one. When my grandson with some of his college friends drove from California to New York and wanted to stop at a barbecue place, I told him about Billy Sims. Good choice for us on the road trip from MO to CO, since there isn't much choices in KS. They items tasted good. Pulled pork was tender and tasted great with good BBQ Sauce. Just prepackaged sauce means mass production and not fresh which is what I think about the bbq in general. It's good, not great and certainly not my top 10 places. But I liked the place with cool decor of a famous Heisman trophy winner. The turkey tasted good just not as tender as it should have been. Delicious! I had pork sandwich; you get to decide what sauce you want. For indoor dining there are three bottles on the table: regular sweet and spicy, hot and spicy, and hot. my husband had the sausage and brisket (so tender). While in Colorado Springs, my brother and I passed a Billy Sims and he mentioned that he had had one decent experience there and would like to go back again. We did not make it, but on the way back to St Louis, Ms T and I happened on one in Hays for lunch. I had a Pulled Pork sandwich with slaw on the side. This was a good sandwich. The portion was generous. The pork was moist and was shredded well. Some places you get big dry hunks, but this was not like that. It was flavorful, but one minor complaint was that it was too salty from the seasoned salt that they shake on when they assemble the sandwich. That would be under control of the guy making it. If we stop again, I will ask them to omit the seasoned salt or go easy on it. I really wished for a good vinegar sauce for this pork. It would have been wonderful. The slaw was dressed well with dressing that had some vinegar backbone. It was fresh and crisp, but was one of those that had a lot of cabbage core and that makes it taste like horseradish. It was OK though due to the good dressing. I saw brisket platters being served, both chopped and sliced. I would advise the chopped. The sliced looked really dry. Save your brisket fill for Texas. They offer a hot link that might be worth a try. I would skip the Polish sausage for the hot link. Billy Sims was A-OK for a quick bite. The pulled pork was worth stopping for and that is probably what I would stick with. Strong three stars. read more

It's getting (2) stars because of cleanliness and helpfulness of the two young ladies at the counter. Stopped here on Feb 9th for lunch. Only one other customer at 12:30. I ordered sliced brisket, pulled pork, baked beans and corn. I should have known better when they pulled out a plastic bag and cut it open to pull the meat out of. The corn was corn, the baked beans were dead dried out, the brisket was bland and was only edible with the sauce pour on it. The garlic bread was decent. The pulled pork was passable. BBQ out of plastic bags? Really? If you want food like a fast food restaurant then you will probably like this. I won't be back. read more

After trying half a dozen Billy Sims locations, this one is middle of the pack with the Colorado springs being fantastic and Sand Springs, Oklahoma being pretty weak. We came for lunch on a Saturday while trekking from Wichita back home to Denver. Service was friendly and quick. We got the family rib zone pack with pulled pork, Mac n cheese, bbq beans, green beans, and slaw. The Texas toast was very fresh, as were all the sides. The ribs were tender with decent flavor, but heavy on the rub and not as juicy as they should have been. The pork was smoky, but dry and needed some sauce to spruce it up.
