Without futher ado here's the order: 2 lbs of brisket 2 links of Lao sausage (Sticky rice/fish sauce) Kale Cole Slaw Potato Salad A subtle smell of seasoning & traditional seasoned Texas Post Oak smoke rolled out of the front door... At the counter we were greeted with two gentleman slicing and dicing all the proteins. A tray stacked with the goods we made our way to a table. First bite of brisket without sauce.... Perfect, literally the way I think a brisket should be served hot dripping with juices. No one asked what type of cut or the dreaded "lean or wet" question was asked nor was it needed. Brisket and sauce was just as delectable. The bark was well rounded never offensive or bitter. The Lao sausage was a well received addition though maybe not the compliment to the brisket. Sides: Potato Salad was straight out of a Bavarian Beir Garten with the green onions and vinegar. Excellent touch to cut the rich meats. Kale Slaw again was another great addition with the cutting hint of ACV. Excellent well rounded rendering of the Texas tradition of fall apart smoked meats.
