A solid vegan and gluten free Pho experience. The broth was not the best I've ever tasted, but Knox is lacking in vegan pho choices, and our previous haunt changed their recipe, so I'll take it! Our server was very matter of fact and succinct, no new BFFs made here. I appreciated that the tofu spring rolls came out warm, usually that's not the case and added a nice flair to that appetizer. There were signs all over the place telling people to not let people let their kids run around because they are serving hot soup. We have been coming to the place for years but likely won't be back now.. We have a $100 gift card that we got about 6-8 months ago. We came to use it today and they told us they could not accept it because they got a new system. They reached out to their manager and he would not do anything to compensate, he said that the gift cards expire yet there is no expedition date on the card. So really they got $100 for free and refuse to take care of loyal customers when this is something that happened on their end.. I've tried a lot of pho places in Knoxville.. this one is my favorite! I'd eat Bida Saigons pho for the rest of my life. The service is also good, servers are sweet and I never had a problem with food or service here before. I like that they have all the condiments on the table as well as chop sticks and napkins. Coming back for an update 3 years after my last review! 3.75/5 overall for today. The food, venue and cleanliness inside are all the positives here. We had an awkward / somewhat rude experience with the initial waiter that came up...where they made a surprising comment to my spouse (we almost left). We're pretty laid back folks and was just shocked before we knew how to react. Anyway, an apology came back on the next trip and the rest of the experience was what we were used to. Still a fan of the shrimp rolls and Pho Tom, definitely the reason I keep coming back. I'll probably be back with work friends sometime, but was just surprised. I judge pho very critically for depth of flavor. This pho was flat and did not have any depth at all. Also, no basil, no fresh chili, no chopsticks, no hoisin, no hot sauce in my to-go order. The banh xeo (Vietnamese egg crepe for first timers) is a MUST. First, it is humongous AF. Second, everything from chicken to prawn to egg+flour blanket was made-to-order fragrant. Third, the combination of grilled meat, fresh lettuce+bean sprouts and fish sauce is just chef's kiss. My bf's pho was heartwarming and filled with all the must haves. My bun bo hue... well I can't say it was bun bo hue. First, it was NOT spicy or umami. Second, the consistency and colour of broth was off. Third, shape and texture of noodles was too thin and too al dente. It was like a bowl of their regular pho with a splash of chili oil. I added another spoonful to give it more heat. Minimal service as expected, which I didn't mind. Not familiar with the Asian food scene in Knoxville so this rating may be skewed high. Told a friend/Knox guru that I had never tried pho (*gasp*) and she quickly said that we must try Bida. Once I arrived, I promptly and awkwardly tried to open every door except for the actual entry door off of Ray Mears, not Downtown W. Blvd. They have expanded into the space next door and the inside is pretty spacious. It is outdated but clean, with a few large fish tanks to entertain the kiddos. The tables each have a large container with all of the sauces, napkins, chopsticks, and spoons that you may need. My buddy and I split the number 34, a Banh Mi Bi (shredded pork) sandwich. Meh. Not much flavor in any component of this. The flaky , thick bun overpowered any taste between the buns, even after adding hoisin and chili sauces. Pass. ​ For my first pho adventures, I ordered the number 8-Pho Tai Nam Bo Vien (Rare Beef, Brisket, Meatballs) with no onions. The broth was the star. Deep flavors, crafted with time and care. The rice noodles were abundant and well-cooked. The side produce like basil, lime, bean sprouts, and jalapeños fresh and ready to rock. The beef and brisket were fabulous, but the meatball a bit chewy and processed for my personal taste. I would order the shrimp or the beef and brisket version next time. Considering the fact that the soup bowl is large enough to act as a hat for Jabba the Hutt, the price is pretty dang cheap. I only ate half of my pho and brought the rest home to my husband. As a Vietnamese person- I wouldn't really recommend this place. I will say the food was ready very quickly and was generally a good deal for the amount of food that we got. The quality and flavor didn't match up to that though. The pho was pretty bland, banh mi had literally 6 tiny strips of meat, the bun barely had any meat and the egg rolls were somehow a bit sour tasting. I'm sure it'll fill the craving in a pinch but I'll definitely be on the lookout for other Vietnamese places with a bit more flavor and better portions of protein. read more

I didn't add more hoison or fish sauce. Just a lot of chili sauce and sriracha. The vegetables were a little sad. The basil was wilty. The large bowl is really large. I stopped in for lunch and this place is extremely efficient with getting you served, fed and out with in your time frame. Most customers ordered the Pho and it looked delicious. I started with the spring rolls, which I enjoyed, and the dipping sauce was very flavorful. I then had the Bahn Mi Bi. The baguette was fresh and crispy and soft. The veggies were fresh and colorful. I'll have to admit it wasn't my favorite. It was just ok and I wouldn't order it again because there wasn't enough pork. When I ordered for my wife I said she would have Bu Bo Hue, the waitress asked me 3 times what? When it came out it was obviously not something they were expirenced at making, they used the wrong type of noodle and I believe they just tried to add some sort of hot sauce to their regular pho broth.
