When I first saw this years ago when I was on my way home from work, I knew I had to try it. It's delicious and just right in sweetness, and is undoubtedly bibingka. Since I was buying it in a mall, I thought the taste would just be an approximation of the real taste of bibingka, but no, this was really bibingka! And I loved its small, manageable size - perfect enough to keep my tummy satisfied and also to fulfill my craving for sweets (if I don't need too much of a sugar high) when I leave the office late and dinner is still a long way home.
And there's even that slight burnt taste, which I love, and the cheese on top is perfect to balance the slight sweetness. What also adds to the experience is that it's cooked in banana leaves, reminding you that you are eating native food.
Actually, they have a combo meal of the bibingka with barako coffee. I haven't tried it since I'm not much of a coffee drinker, but I imagine bibingka and kape barako must make a good combination. read more
