So they have other beers (craft) as well as ciders and n/an options. I love a good cider but I also know to watch out for that ABV! I'm gonna try their ciders next time we do an overnight in Dripping Springs. Drinking cider and driving back to Austin wouldn't be the smartest thing to do. Same goes for any product containing alcohol, really. Moderation, friends. So back to the pours. When I say they're proper, I'm not exaggerating. I feel like they deserve some sort of acknowledgement from England because the beers are that good. The Whitby is an English pale ale and it goes down so smoothly. The two cask offerings are out of this world. Can't remember the names but one is a dark beer and the other a bitter. I'm here all day for them. Like all day. They also have a nitro milk stout I can't wait to get my lips on. Milk stouts (stouts in general) are another fave of mine. The brewery is welcoming and I loved the vibe from the minute we pulled up. We got one of their flagship beers, the McConauhaze which was a New England style IPA. It's obviously referencing Matthew McConaughey who went to college in Austin (but is originally from the San Antonio area). Lots of Austin folks make references to the actor. In the flavor profile for this beer it is juicy, citrus which contributes to a strong overall flavor but is yet smooth with this hazy. It's a nice solid beer overall. The location for this brewery is great, large place and it's in Hill Country.

It was hella hot, but we're native, and we had good beer. Service was awesome! Stand out for us was Maria! We kinda joked a little that we had the same first name, then straight on to the beer. She gave us the perfect drinking order, considering our tastes. La Petit Prince was a fabulous starter, low abv, and super tasty. Her next suggestion was Das Wunderkind, again, super tasty! She was on a roll. Last suggestion she had was The Spon 3 Year Blend, it was excellent. We had a few other beers before we started getting hungry. Maria came grab our glasses, and heard us talking about food, and suggested the Citron Pizza. What the heck, so far all her suggestions were spot on, why not? That pizza hit!! Checked all the boxes. We did both the smashburger and chicken sliders - 3 of each & all different styles ($15/ set) - @ $5/ ea, that was kind of high but more variety. The single sammie is definitely a better value. They were tasty. Again, with free beer - hey, still a great deal! The grounds alone are worth the visit. Staff were very friendly and welcoming. They shared the background story for this veteran owned business & it was all just very inviting. The beers we had were all good. My favorite was the dark stout, which was a very solid stout.

While the tasting flight gave me a deep appreciation for the spirit on its own, I found that sotol truly sings in cocktails, where its earthy elegance can mingle and unfold alongside bright, bold flavors. The on-site bar offered a handful of inventive, locally-rooted options, but one drink in particular bloomed on the palate like a cactus flower after rare desert rain: a Prickly Pear Margarita. Vibrant, jewel-toned, and ever so slightly wild, it balanced sotol's herbal backbone with a sweet-tart burst of prickly pear and just enough lime to make the whole thing sparkle.
