After 3 Days Of No Solid Foods (Clear Liquids Only) I Was HUNGRY! My Husband Asked If I Would Like To Go To Lunch,... Lunch In Old Town Katy? That Usually Consists Of Fast Food , Mexican, Or Greasy American. Mmmm, No I Don't Think So. But, My Husband Informed Me That we Had A New Chinese Restaurant In And That It Had Received Many 5 Star Ratings On Yelp.
So I Went...Thinking That The Only Thing On The Menu I Could Eat Would Be Egg Drop Soup And Plain White Rice. Boy Was I Pleasantly Surprised! We Stepped Into A Tiny Space That Was Elegantly Decorated With A Sophisticated Style. The Menu Was As Refined And Tastefu As The Decor. -- Lamb, Vegetarian Gourmet Selections And Special Diet Considerations. I Instantly Knew That The Proprietor Was Thinking Of
The Varied Needs Of His Customers As Well As Their Desire For Gourmet Masterpieces.
I Felt So Welcome And Comfortable That I Asked The Owner/Chef If He Could Prepare Me An Order Of Fried Rice With Just Egg. NO PROBLEM. He Was Delighted To Take Care Of My Special Dietary Request.....In Fact, He Explained That EGG FRIED RICE Was The Preference Of Most Chinese People. "I Will Make You Something Very Delicious".
And He Did! That Was The Best Fried Rice I've Ever Eaten! Plainly Simple But Overflowing With Flavor. The Egg Drop Soup Was Equally Delectable And Soothing To My Distressed Intestinal System.
I Found Culinary Heaven And It's Name Is BEIJING RANCH. I can't Wait To Return When My Stomach Is Healed And Ready For Some SPINACH DUMPLINGS, LAMB w/ BASIL SAUCE & GREEN TEA ICECREAM.

Well, here it is, Saturday night, 3 days after my first visit to Beijing Ranch and I've had two more fantastically tasty experiences that I just had to add on to my review.
Yesterday I was still very ill and the only thing I felt like I could eat was another serving of that wonderful EGG FRIED RICE that William had made for me. My darling husband was delighted to not have to cook or to have to go pick up a take out order (so grateful for delivery service).
Hubby ordered SHRIMP WITH EDAMAME PEAS and WONTON SOUP and I ordered my EGG FRIED RICE with EGG DROP SOUP. The servings were so big on the dinner portion that we had plenty of leftovers. I grin to remember all the happy yum-yum sounds coming from my husband as he delightedly tucked into his dinner.
Then, today, miracle of miracles, I woke up feeling like a human again .... and a very HUNGRY human.
For supper tonight, I pulled out our leftovers from Beijing Ranch and the leftover grilled chicken from Monday night. There wasn't enough of any one thing to feed one of us. What to do, what to do?
I decided to keep it simple. There was plenty of egg fried rice for both of us so I just reheated that with a couple of Tbs. of chicken broth.
Now for the main course; I chopped up onions and bell peppers and sauteed them with a little bit of grapeseed oil on Med.-High heat. Then I added the diced chicken breast and stirred it around long enough to heat up and absorb all those luscious flavors.
Next, I added a Tbs. of my Pineapple-Habanero dressing and mixed it in well with the chicken and veggies. I added a 1/4 c. of water to deglaze the pan and release the sweet juices. Then I tossed in the leftover SHRIMP and EDAMAME PEAS and cooked it for one minute .... didn't want to overcook the shrimp.
OH MY GOODNESS! I served this delectable concoction over my Egg Fried Rice and the essences were incredible! The integrity of the original flavor of the Shrimp and Edamame Peas was still in the forefront with a shadowy hint of sweetness. I ate like I was dying .... and had I kept on eating that marvelous dinner I would have died from a busted gut.
Thank goodness there is enough leftover for my lunch tomorrow (shhh, don't tell Hubby, he thinks it is all gone).
William, I think I've hit on another menu item! I can't wait until Tuesday when I take my Jewelry Class for lunch at my new favorite restaurant in Old Katy. read more
