I've been to breweries and brewhouses across the United States, as well as in Europe and Asia, and Collusion is a classic American brewery: a restaurant and bar built around the brewing operation. It leans a little more toward the restaurant side than many breweries do, but it's a small operation with a very neighborhood feel. The beer is good, the food is decent, and the people working there were friendly. Nothing about the visit stands out in my memory as especially good or especially bad, which usually means everything was running the way it should. If you've spent time in small-town American breweries, you'll recognize the format, and Collusion checks every box. It isn't one of a kind, but it doesn't have a real weakness either. It's a good brewery that does everything a good brewery should, and I have no complaints. In fairness, I've only been once, and it's been a little while. I don't recall any trouble with parking. If you're in the York area, it's worth a stop. If you're looking for something different and it's within a drive you're willing to make, you probably can't go wrong.

While I waited I got a Whiskey Ginger which was very good. All of the food was extremely good. All held up great on the drive home. They have a pretty nice merch section right as you walk in the door. I've been here a few times over the years and every time they have been out of pint glasses to sell. This time I decided to just get the tall mug. Behind the bar they have all kinds of knick knacks. They all look like they have never been dusted once since they opened. On nice days they have a decent size outdoor seating area with a great view of the beautiful graffiti artwork that has been done to the surrounding buildings.

    The Cameron Street location is the original home of Appalachian Brewing Company (ABC) and is…read moreunrivaled for its ambiance. The building is a former printing plant which has a spacious tap rooms/dining on the first floor and the Abbey Bar (with occasional live music) upstairs. I'm a big fan of ABC for many reasons, not the least of which is their variety of approachable and tasty beer styles for nearly any taste. ABC manages to stay creative with a mix of standard selections with a rotating cast of seasonals--but nothing too exotic. The food has been good in my experience and I confess a particular liking for the pierogies--pretty darn good for this part of PA. Service at this location has been uniformly excellent during all my visits. A couple of mild quirks about the Cameron Street location: first, parking is a bit odd. There's a small lot near the entrance but most parking is near the back of the building. Second, the brewery is on a slightly industrial stretch of Cameron Street. Translation: the neighborhood looks worse than it actually is! ABC runs an excellent small chain of brew pubs (I've visited most of them) but I think the original has a je ne sais quoi that makes it special.

The food in my opinion is a touch above a typical brewery these days. The pierogies and Brotz were amazing and I absolutely love them. The beers are typical for an established brewery and were quite tasty. Especially like the staff, they were friendly and very attentive. The atmosphere was awesome, and I really love the themes that seem to shout out to through hikers on the Appalachian Trail.

Service Assessment "Service followed a generally appropriate sequence. The menu was presented clearly and water and beverage were offered . Specials were presented. The specials which were offered were few in number. Not a detraction if the main course exceeded expectations. Order taking reflected strong menu knowledge and was handled accurately without clarity. Timing was prompt with overall pacing consistent with an experienced waitress. Interaction tone was professional and appropriate , with communication that supported the overall experience. Deanna was on her game tonight. Dinnerware was lacking refinement, one set was not clean and needed a re-service. Second set was perfect. Not negatively graded against Wold. The dessert was offered at the right time. Perfect timing in food presentation. Overall, service execution was consistent, with maximum impact on the flow of the dining experience. I asked for the main dish to be delayed and Deanna professionally judged correctly. My meals were delivered when I wanted them. I would hire Deanna with a raise anytime. Crispy, not over salted, oil was maintained. Ingredient quality appeared consistent, contributing to a result that aligned with the intended outcome. The ingredients appeared fresh and left the potato as the star. Overall, the dish was well executed with noticeable impact on the overall dining experience. The hots sauce with the spikes of heat was done at a master's level. I didn't burn my mouth and it was not so hot it covered the flavor of the pierogie. Well Done! The last time I was here the wall near the urinal still needed gray paint. And it does until this day. The floor in the bathroom is hard to keep clean. Popping in to clean the floor every now again would help. While the waitstaff were busy. This was the time for front of the house To take the initiative. Fenced in outdoor space, corn hole, food, drinks, live music, and recommended by a friend. And technically it had all of those things! And yet somehow, those things were generally only okay. First, music was inside and it was incredibly loud. So we go outside which was just.... A mess. Like, we got mustard on our clothes from an unclean table; food and napkin scraps all stuck in the grass everywhere you looked. Then, the service outside is through a window, which in itself is no problem. The issue is that it was single server on a Friday night and the line took a really long time. The food and drinks we did get, we enjoyed. Based on the other factors, I am unsure that I would make it a point to stop here when back in the area.
