Having decided to go on my own tour of the Nordic Countries/Scandinavia as a birthday gift to myself, I knew I wanted to go somewhere special for dinner on the day of. I don't really remember how I found this place, but after I started following their Instagram account, it didn't take long for me to decided that that's where I was going. I really dig the philosophy of sourcing locally, cooking in season, and using as much of the animal as possible, and their sense of humor is wonderful. I was not disappointed on arrival. It was a Sunday night, so it was pretty slow and I had the entire indoor dining room to myself for most of the night. It also meant that I had the attention of the wait staff too, and they took great care of me! I went for the 7 course chef's tasting with wine pairing and we paced it out to a 4 hour dining experience. Every dish was well composed and balanced and quite flavorful. Most of the dishes had an earthy flavor; if you really like meat and potatoes, you really can't go wrong with Bastards. The wines paired well with each dish, and the portions were well sized. It was a LOT to get through, even for someone with a hearty appetite like me, though! I had such a nice experience that I actually returned the following week to have my final dinner in Copenhagen before returning to the States. Not only did they remember me from my first visit, but they greeted me like an old friend and my dishes were presented by the chef himself! (I only did the 3 course meal this time. It's a good deal and I was more than satisfied at the end.) This will sound cheesy to say, but since I've dined in several different countries, I would say that this is literally one of my favorite restaurants in the world, haha. When I come back to the city at some point, I will make it a priority to dine here again! read more
