The waiter provides salsas in good portion cups. The salsas are all delicious! The red/orange was my favorite then the green. The pastor (meat on the spit with a pineapple above it) is the real winner here, you can order it "con piña" (with pineapple) that is shaved off the spit at the same time as the meat. Don't forget about the tasty salsa bar where you can pick up all the fixings (onion, cilantro, lime, spicy pickles onions, habanero salsa, green salsa, and anything else you can probably imagine if you've been to a taco shop). We also especially like the "agua de Jamaica" aka hibiscus flower water, and the limonada (like lemonade but less sweet). They also normally have other flavored waters and horchata.
