There were dozens of food trucks to choose from, but this one drew me in. They had a picture menu on the side of the truck at eye level. The images were large and in color making it easier to identify what to order. There was a line at the window to place one's order. I bought way too much food, but I really wanted to try their papaya salad AND the chicken coconut curry noodle soup. Both looked delicious and did not disappoint. They accept credit cards and digital payments. You'll receive a ticket with your order number and then wait to the side for them to call your number. It was a good 15 minutes or so before I was called. I knew it was going to take some time, so I actually walked around the festival to check out the hot air balloon glow on the other side of the park. My salad was served in a cardboard box and my soup was in a plastic bowl with a secure lid. Plastic silverware kits were also included in my bag to go. Despite bringing my food home to eat, the dishes were well presented with a lovely purple orchard adorning the top. I saved the salad for breakfast for the next day. It held up. The chicken was bone in, but let me tell you, the meat melted off the bone with the slightest touch. It was absolutely fantastic. Yet - in Arizona - there it is. With all the jibber-jabber about SoCal vs. Norcal vs. Texas vs. Chicago Mexican food, the true champion is on the sands of the Sonoran Desert. So what about the machaca? The chilaquiles are fine. Would be even better if served hot instead of lukewarm. The puree of pinto beans are piquantly larded. As for the tamal, the masa tasted oddly sweet. But the machaca starred. First they dry the beef. Then they smoked it. Finally they shred it. These pencil shavings of carne de res are then reconstituted in a sofrito. The flavor gives evidence of the smoke; gives evidence of the drying process; you discover also a slight tang from the aging process - similar to any dry-aged beef - but also bottarga or shrimp paste. In a jar on the table are the native chiltepin dried chillies. Each table has its own ornamental chili grinder.
