If summarize this place as getting a call from a friend to come over for a backyard BBQ and you're excited because they can work the grills/smoker. This is quintessential old school central Texas BBQ. Not the craft bbq you'd get in Austin. I think it's significantly better than the notable staples in Lockhart. This place reminds me of Snow's (which I adore). Scale 1 = no way / 5 = stellar Turkey - 4 Ribs - 4 Chicken - 4 Brisket - 5 Sausage - 5 Sides: Cheesy potatoes - 3 Mac n cheese - 3 Green beans - 4 Pea Salad - 4 Potato salad - 5 Wednesday (at least Ash Wednesday they did) an Friday's they serve fired catfish with hush puppies. For all the flavor and seasoning the other meats had, they forgot it in the breading of the fish. This needs to be doctored up. This receives a 2! I believe 3 meats and two sides are $20. As a huge BBQ lover, any time I roadtrip or travel to a new town, one of the first things I do is look BBQ spots in the area. This is how I found out about Baker Boys. I Stopped in recently around 11:30am one Friday morning on a day trip to Gonzales to do some history sightseeing. The large parking lot was pretty empty when I arrived so I had my pick of the spots. When I walked in I followed the delicious smells right up to the front where I was the only person in line. Wanting to sample a couple of things, I went with a three meat plate with the pork loin, marbled brisket, and sausage. The sausage was crumblier and leaner than I like and the marbled had close to a gas grill taste to it that wasn't my favorite although the bark was tasty and the meat good and moist. The pork loin was my favorite of the three but I wished it had more of its yummy raspberry sauce on it. The sides were yummy with the mac and cheese and giblet rice being solid choices and I also really enjoyed the house bbq sauce. It complemented the brisket and sausage really well. The staff helping me behind the counter was also super sweet and friendly and patiently answered all my questions about the food and the little town of Gonzales. Overall, it wasn't Texas Top 50 caliber to me and I wouldn't go out of my way to make a trek just to visit this spot BUT if i'm ever back in town visiting I'd go again for a solid and enjoyable BBQ meal. read more

Met a friend and her husband for lunch, and she wanted to meet here. This was my first time eating at Baker Boys, and I had a little difficult time finding it. (Don't come to the area very often.) I just recently, within the past week had an opportunity to try it again. Got take-out for two. Sliced brisket, sides of coleslaw, potato salad, sauce on the side. And also four pork ribs to go. The meat was dry, seemed over cooked, tasted like some kind of artificial smoke flavor. The sauce? I don't know what they changed with their sauce recipe but it was awful!! In my pursuit of visiting all of the Top 50, our travels led us to Baker Boys BBQ in Gonzalez, TX! Upon walking in, the ambiance was giving me old school mess hall military vibes which was perfect. I also want to comment on how friendly all the staff was too. Smoked sausage had very good flavor but something to note is it's the kind of smoked sausage that's in that tight kinda chewy casing and the meat inside was a little crumbly, not really emulsified all the way. The brisket was above average. Definitely worth a taste. The real stars of the show were the smoked chicken with its super crispy skin and moist meaty interior and the pork loin which was absolutely divine - damn near perfect. I went through the drive thru on my way out of town during lunch.. Zero wait so that was good.. while I was on a BUDGET.. I splurged and I ordered a half of lb of brisket and was very disappointed. 3/4ths of it was squishy FAT. It wasn't "tasty bits" it was just FAT. I also ordered chop beef sandwich.. I always think you should rate a place according to it's class. If you rate a fast food restaurant, I compare it to other fast foods. Not to fine dining. Similarly, when I rate a Texas Monthly Top-50, it should be the best of the best in Texas. Sadly, this place didn't come close. Don't get me wrong. The food was good. Whatever, I call 'em as I see 'em. The place was ginormous and quite the operation. It was a huge metal building that had been turned into a BBQ joint. Even had a well defined drive in. When I came thru, more folks were doing the drive thru than coming in. I went with the two meat platter in order to surf around the options. For the first meat, I went with the brisket. NOT a Top anything there. I sadly didn't pick up any bbq sauce. Likely it would have helped a lot. The brisket was mildly smoky with way too much texture. The pork loin was almost unappetizing. It was very rubbery, chewy and was all I could do to gnaw it down. I tried one of the slices and then just quit. The sides started to redeem the place. I started with the green beans. Those are an all time favorite of mine. Always reminds me of home. This was almost like the ending of Ratatouille. Where the mouse brought the curmudgeon to his mom's cooking. I was instantly transported to Mom. Loved it and love her. The second side was the potato salad. Again, the sides kicked butt on the meats. Most potato salad is an amorphous mass of sameness. This was literally little cubes of potatoes, soft, wonderful starch surrounded by the normal potato salad mixings. It was truly unique that everything had it's own place in harmony rather than one same taste. You just have to trust me on this and go with it. It worked rather well. I finished off with a bit of pecan pie. I always joke that I've never met a pecan pie that I didn't like. This continued the trend of pecan pies that hit me just right. It wasn't anything to rave about, but if you want a solid pecan pie - this is it. Overall, if I lived local, I'd give it a shot again. Eating BBQ in Texas. Once again Baker Boys BBQ in Gonzales Texas made the list! Went to Baker Boys BBQ on a Monday. Great day to drive and get some great BBQ. When driving to Baker Boys BBQ make sure to look for the white sign and the cannon. This place has a drive thru, eat inside dining room & eat outside also. Had a bit there and got some to bring home. Had some moist & lean brisket, some sausage along with some cheesy potatoes & 2 jalapeños. Arrived around 1pm and the place was a bit busy at drive thru but inside the line was short and fast. You order your brisket first then your sides then your others, onions, pickles, jalapeños. Please note they do charge for the jalapeños but the pickles and onions are complimentary. The place has a large dining room. And plenty of parking when you get there just follow the great smell of BBQ up to the front to place your order. Enjoy. read more

I have been wanting to try this place for a couple of years now, finally got a chance to do so on our way to Port Aransas. I have to say, I was pleasantly surprised. The moist/fatty brisket was really good. Great bark and smoke ring. The sausage was some of the best I have had and the ribs were okay. They were good, but dry. If I could have given it 4.5 stars, I would have. The great thing about it, is that you can walk up and get some pretty good BBQ at a fair price and not have to wait hours in a line to do it. When I visit a BBQ place, the first thing, I like to try is thier sausage, it was just the way, I was brought up. Sausage was what set the standard for the establishment, you can get good brisket anywhere, but not good sausage. Well, brisket at Baker Boys, was melt in your mouth good. For *this* barbecue enthusiast, however, the list is the editorial equivalent of a full season of "Diners, Drive-ins, & Dives," a hastily compiled lineup betraying a dearth of insight and commentary. I sometimes consult the list out of curiosity, but I seldom heed the vague recommendations buried within the one-paragraph synopses. I prefer instead to survey the online landscape (food pictures, cringe-worthy Yelp reviews) and determine if a place warrants a road trip. Baker Boys BBQ -- a recent "Top 50" honoree with an overall 4.5-star Yelp rating -- struck me as a place with potential, a traditionalist post-oak operation manned by a father-and-son team with a collective 70+ years of pit experience. What I experienced, unfortunately, was barbecue only slightly more impressive than high-school cafeteria fare. As my father and I entered the large, cavernous dining hall (former home of the Hodges Construction building), the two staff at the front greeted us with cold, icy stares and a brusque "What'll it be?" delivered with "Village of the Damned"-like mind meld unison. Owner/pitmaster Wayne Baker was polite but not ingratiating, a sign I mistook as an ironic, counter-intuitive harbinger of excellence to come; surely his flat affect and overall air of dispassion would somehow translate to exemplary 'cue, the kind worthy of the "Top 50" destination. Alas, I was kidding myself. The three-meat plate sounded like a good value at $15, but I would have gladly paid exponentially more elsewhere. The "moist" brisket was devoid of the intramuscular marbling and smoky fat cap I had expected. The three desiccated pork ribs bore an overpowering, quarter-inch-thick rub of what tasted like equal parts salt, garlic powder, and MSG-laden Fiesta-brand fajita seasoning. The watery, vinegary house sauce helped re-hydrate the ribs -- which amounted to little more than brittle bones and pork floss -- but added no depth of flavor. The much-lauded homemade beef-and-pork sausage links picked up snap from the pit, but the coarsely ground meat -- replete with hard globs of unrendered fat -- needed more seasoning and more smoke. Sides were serviceable but not spectacular. Many small-town eateries (diners and BBQ joints alike) source their sides from the back of a Sysco truck, so I appreciated Baker Boys' homemade traditional coleslaw (creamy but not wet, sweet but not cloying) as opposed to the slimy, sugary, mass-produced industrial crap chock full of artificial emulsifiers and chemical flavoring agents. My dad, regrettably, was not so keen on his side of pinto beans, which he described as "bland, watery, and piss warm." Having never measured the temperature of urine as it exits the urethra, I am wholly unqualified to comment on the thermodynamic properties of Baker Boys' pinto beans. I hate to be contrarian and poo-poo what is apparently a well-regarded addition to the South Texas barbecue landscape, but I found Baker Boys BBQ to be unworthy of the "Top 50" tag it so proudly advertises on social media. The next time you plan a road trip to an obscure barbecue joint in the middle of nowhere, please consider taking the scenic drive to Sisterdale, home to three places: Blackboard BBQ (see my review), a saloon, and a cemetery. Stopped by to grab a to-go order to take home on a recent trip through Gonzales. Fast, friendly service in the store. Our drive home was 2.5 hours further south, so we had to reheat our order once home and was pleased to find that great Texas bbq smoked meat flavor in each of the 3 meats we chose once we got home.
