That said, when you can still get a 10oz top sirloin steak for just a little over $10 including tax, it's hard to complain too much, so I'd still give it two stars. Considering inflation and the current economy, it's obvious they've had to lower the quality of the cuts they use. Still, I honestly feel the meat used to be noticeably better before the pandemic. One thing I've always thought: ordering cheap steak medium or medium-rare is a mistake. These cuts tend to have a lot of connective tissue, so unless they cook it fairly well-done, it's just too tough and chewy to enjoy. I think top sirloin is actually one of the most difficult cuts to use for steak, because it's a cut that contains a lot of large and small connective tissue throughout the meat. With Wagyu, top sirloin can be incredibly tender, flavorful, and excellent as a steak. But the meat they're probably using here is Select grade or possibly even ungraded beef. Unless you have a very skilled butcher who really knows how to trim and break down the cut properly, I honestly don't think top sirloin of that quality works well as a steak. Do they still have that late-night / early-morning Egg and steak special? If I remember correctly, it even came with bread back then, and it was around the same price range. I'll probably try it next time. Overall, at this price point, it's something you can tolerate by telling yourself "you get what you pay for." But when a restaurant focuses on selling very cheap food, you can also feel the standards of the staff slipping, and there really isn't much in the way of service anymore. Of course, expecting high-quality food and excellent service at this price range is unrealistic, and the level of tipping generally reflects that as well.
