    Where I come from it's not the culinary hum drum, in point of fact, it's quite the opposite. All ethnicities are represented by their foods, the foods their grandma made and the benefit of having a readily available abundance -- I suppose I took for granted. I'm gonna eat everything in sight that's not nailed to the floor upon my returns hence forth. Outside of the bigger cities the food scene is a bit short of abundant, and I understand this, it's not a slight to anyone or anywhere - I don't create the food news, I just report my experience on it. Perhaps there is a misnomer of ethnic foods - a vision born out of a book or a movie - or perhaps neither of the above. What I'm getting at is this, when I think of Spanish food I don't think about what I can buy at a bullfight or what the flamenco club is serving next door all meals served with refried beans and hot sauce, perhaps others might. I ordered the little meats AKA: Carnitas Taco from Athena herself I believe, she had that beautiful Spanish positive energy flowing as we chatted lightly. Her description and the lightly almost melting pork with it's crispy edges had me hypnotized. It was juicy and balanced in layers tucked together with a tortilla blanket, tipped with freshly dices cilantro and yellow onion. Your not going to get this experience at home without hours of practice, if at all and the restaurant just up the road that shall remain nameless can't pull this meal off the way Athena did - the nine bucks seemed a tad steep, not that I'd not return because of it, but I wanted two, maybe three. Perhaps a volume discount can be instituted.

    Wow... swung into this place conveniently located just down Rte 1 from the Freeport exit off 295. I tried the carne Asada burrito which was phenomenal! Now, I am not usually one to choose burritos, but tried it on the recommendation of the owner. She knew of what she spoke. This burrito was hefty, chock full of perfectly seasoned bite sized flank steak, rice, black beans, and cheese wrapped in a flour tortilla. It could have (and did!) feed 2. It came with a side of cilantro sauce which was very flavorful. I hate greasy burritos, and this one was not at all. I didn't, but should have tried one of the yummy looking margaritas coming out while I waited. Don't expect fast food - everything looks to be made to order, and well worth that wait! The owner was at the register and is very friendly with the customers, while her husband is making the food. Who doesn't love a good, local family run business? Prices are very reasonable for the size of this burrito - $14.

    Absolutely love this place! The food is fantastic and the owner is an absolute gem. She and her husband are passionate about their business and the food they serve. I visited their food truck today at an event in Freeport. The chili I ordered was full of brisket and chorizo, and super satisfying on a cold day.

    The owner welcomed every guest like they were family. She even remembered my sister who visited months ago! Ordered the Athena's burrito with brisket--which was recommend by the owner. Meat and rice were phenomenal! The burrito was so big I couldn't finish it or order desert! My boyfriend ordered the chicken and beef tacos, they were filled to the brim with meat and the creme fresh was delicious. The owner's kids were playful and cute!

    Go get their birria tacos. You won't find better in the state. I promise.

This weekend I took my best friend and it was perfect, even in the middle of winter. The deck is still open with plenty of space heaters and even heated seat cushions. We actually got so warm we had to peel off layers, which feels like a small miracle in Maine. The two of us love a marg & taco outing, and make a point to scope out the best of the best. We started with chips and salsa and some queso, which were the perfect kickoff. Then we ordered the street corn succotash, my absolute favorite. It's packed with flavor and topped with the most delicious, salty cotija cheese that pulls everything together. I crave that dish. We split the smoked brisket tacos and the smoked pork carnitas tacos, and both were outstanding. The meat was smoky and tender, the flavors were bold without being overdone, and every bite delivered. And the margaritas? Excellent and refreshing. Exactly what you want alongside that food. On top of all that, the staff is consistently wonderful. Every single time we've gone, our waitstaff has been charming, attentive, and genuinely helpful with recommendations. They strike that perfect balance of checking in without hovering, and they make you feel welcome from start to finish. Terlingua never disappoints. Great atmosphere, incredible food, thoughtful touches that keep you cozy even in winter, and a team that clearly cares about the experience.

The beef was my favorite and had an amazing juicy, salty, and tangy flavor with the crispy casing. I'll say to skip the chicken, it was bland and had no flavor. My mom ordered the dessert empanada with cheese and a fruit inside and she said it was delicious and I'll say I can second that. The smoothies were delicious and had plenty of options to choose from. My mom ordered a Columbian milk coffee and said it was one of the greater ones she's tried, possible the best.

That's ok because the very kind gentleman on the truck made the 3 Amigos sound really good! It's one pork, one beef, and one chicken taco on homemade tortillas with the standard fixings - onion, cilantro, guac, and salsa. I will say that the homemade tortillas are very good, though different than most I've had. They are soft to the point of almost being creamy? Very very rich, reminded me of the base of a sope. The meats were absolutely delicious and grilled and full of flavor. I loved both the pork and the beef, though the fattiness could've used an extra lime or two. I took one bite of the chicken taco and got a couple little bones, so I didn't eat the rest of that one. The sauces were good, though I was told one of the sauces was VERY VERY hot and I didn't detect a lot of spiciness from it. I think overall, I could've used double garnish, double lime, and a lot of extra heat. There are no prices on the board so I was thinking three tacos would come to like $10 - $12. Turns out they are $20 before tax, holy moley. I admit that my expectations were high before I even took a bite, because that price point is a little crazy. I am super curious about the brick and mortar because I'm sure it's a different experience with the food truck. These tacos were definitely tasty enough to do some more research!
