Assumption Abbey Fruitcake with rum and fruit marinated in wine.

I think these fruitcakes are great, and I'm really not a fan of fruitcake. My most recent purchase was purely for nostalgia. I remember when we first moved to Tampa and found this cake at the William-Sonoma store. They used to sell these cakes made at the monastery in the actual store but always at a high price. Mom was so upset when they stopped selling them but then I found out that the monastery sells them online or through a mail order form. She was thrilled. We'd been purchasing them yearly around Thanksgiving time for a little over 12 years now until mom passed away last year. I think that was the first year I didn't have the fruitcake even though I did receive the order form through the mail that year addressed to my mother. They will send one to you each year if you are a loyal customer. They send them out early because the cakes sell out quickly around the holidays. Well, I decided to order one this year even though my husband says he hates fruitcake. We received the tin with the fruitcake wrapped in plastic like always. I know there are other monasteries that make them, but this one seems to have tastier ingredients. That's just my opinion. You will have to try it for yourself. I think I like this one better because it's not as boozy tasting as the others made with bourbon. This one is actually injected with 2 oz. of rum, although this time I didn't taste it as much as previous years. However I still could taste the wine soaked fruit, and all the flavors seem to blend well together. It's a very moist cake and will fall apart if you try to slice it at room temperature. I was really shocked to see that most of it was gone in a week. I thought I'd have it around for a while, but it appears that my husband must have really liked it because I noticed that half of it disappeared the other day when I went to get a slice out of the refrigerator. I guess this will continue being a yearly tradition for us passed on from mom. She loved fruitcake, and this one was her absolute favorite. We'll keep it going for her.
