Stopping in for a glass of wine and beer, I wanted to try Dry Sherry before we left Seville. My husband was on board with the Sherry train, until he saw their massive Local IPA list, and was was drawn to the beer.
We were all set on drinks only, but seeing crispy chicharrone on the bar and menu, I had to order! Though, what arrived wasn't what I 'thought I ordered'. They presented not the crispy chicharrone I saw on the bar, but long bacon-like slabs of meat, with crispy cracker wafers. At first, I felt a twinge of remiss, but once I took a bit, I was in love with the 'other kind of chicharrone' presented. Amazing seasonings, the meat was a burst of flavor in every bite. Thin strips, yet thick tasting, as they were well cooked. We found ourselves using the leftover crackers to soak up the seasoning oil left on the plate.
