The staff was very welcoming and took escorted us directly to our seats. We had opted for the the front, which was actually a table but who cared. We actually enjoyed it more as we were able to meet the other people at the table. Prior to the show we started out with cocktails as neither my wife nor I are beer drinkers. They had a surprisingly robust bourbon selection and the bar tenders worked quickly to serve the inrush of people prior to the show starting. Great place. I hope they continue to host more fun events like the comedy show.

The exterior is understated, with a patio sitting in front of a roughly 1,900-square-foot space that was carved out of a much larger redevelopment project. Inside, everything stays relatively simple: a small bar, a mixture of communal and high-top seating, beer artwork and quotes on the walls, and the brewing equipment sitting toward the back. It doesn't try to look like a massive production brewery because it isn't one. Instead, the small size becomes part of its character and fits well with Pilot's focus on experimental, one-barrel-at-a-time brewing. The beer gives you plenty to explore, with styles ranging from approachable lagers and Kölsch-style ales to tart fruit beers, IPAs, stouts, and whatever experiments happen to make their way onto the taps. My four-beer flight only gave me a small look at what Pilot produces, and unfortunately our schedule kept me from settling in with a pint afterward. What ultimately stayed with me most, however, was the experience. From a knowledgeable and welcoming person behind the bar to an owner willing to pull up a chair and spend 30 or 40 minutes talking beer and telling stories, Pilot felt less like simply stopping somewhere for a drink and more like being welcomed into someone's neighborhood brewery. The beer gives you a reason to visit, but that personal approach is what makes it a place I'd want to return to.
