We came here right at 11 on a weekday and was one of the first patrons to order food here. The cashier promptly took our order and we waited for food. We both ordered the antigravity noodles with sausage. Noodles came preferably 20 minutes after we had ordered it so even though it wasn't busy it did take quite a while. Not sure if the length of time that it took had anything to do with them opening up or not. Gravity noodles are quite aesthetically pleasing, however the taste left much more to be desired. As a Cajun dish I expected it to be spicy which it was. Unfortunately, the dish itself is overpoweringly salty and oily. I expect that some noodle dishes with a broth to have oil and have a salty taste or where this was incredibly unpleasing. Although the dish itself was quite cute when we got it I do wish that the radish that is used with the straw to prop up the noodles was cooked so you could at least eat it instead of having a big bulky piece of raw vegetable in your ball that is not integrated into the dish other than as a prop for how they create the anti-gravity noodles. They were out of bottled water, which was fine since there are plenty of other locations to get drinks at, but she went out of her way to bring me a cup of ice and water for my toddler. This pho centric establishment is tucked downstairs in the Anaheim Packing House, adjoining a lovely indoor courtyard area with two wooden porch swings and several long communal tables. On the weekday when we visited for lunch, the restaurant was doing a healthy amount of business, but not mobbed. Food took about 10 minutes to be served. The regular pho came with a nice, straightforward, northern Vietnamese style broth. I ordered it with brisket, which was sliced paper thin, appropriately fatty, and utterly melt-in-your mouth gorgeous. You serve yourself garnishes: basil, mung bean sprouts, jalapeno, and hoisin / sriracha, if you want them, but no lime or lemon. I missed the lemon / lime, but other than that, thought the pho was perfectly flavorful with no more than basil and sprouts added. The ratio of broth to noodles was perfect. Protein amounts would be normal to generous in Vietnam, but I found myself fantasizing about more brisket. Almost every other party ordered pho with beef ribs included. Ordered rare beef pho with a side of beef ribs. The ribs were to die for! So tender and fell right off the bone. I normally love oxtail but their ribs were a major contender for my usual oxtail fix, I think I actually prefer the ribs now. I'm a huge advocate of bone broth and its nutritional benefits, so when I saw that their broth is made of real beef bones I was thrilled. You can really taste the difference in the broth, it's satisfyingly sweet from the bones used. Okay this place used to be my favorite place to get a bahn mi sandwich. I'm not sure if they changed ownership or the workers just don't give a f*ck. I ordered the grilled pork bahn mi and it was nothing like the ones I used to get here. The bread was so soggy when I received it and it looked like a kindergartner mixed all the ingredients up and slabbed it right into the sandwich.
