So one might ask - what's the difference? -- Quality instead of quantity. Refinedness over size. That means that the tiny bite-size siu mai's are of supreme quality - perfect texture and very rich in flavor. -- Creativity. I'm quite sure that most dim sum lovers would have had a version of stuffed peppers somewhere. But how about a dish (or pan) of freshly pan-fried stuffed peppers and eggplants served - you guessed it - in the pan! Absolute yumminess can somehow indeed be found. (See picture) -- More Creativity. How about some fried bean curb rolls with baked lobster broth? (See picture). Bean curb rolls are a very common dim sum dish. But wait! Deep fry these super yummy rolls and serve them with a bowl of baked lobster broth with a flaky crust? Just in case you don't know how you're supposed to eat these (LOL) - Take a piece of the roll and dip it into the lobster broth, let it soak for a few second, then put it in your mouth and at the same time contemplate how far you are away from dim sum heaven. -- A rare gem perfectly made. Trying to find a quail's egg in the US in not that hard. But trying to find a quail's egg siu mai in the US is close to impossible Especially a really good one. (See picture) For a brief moment I thought I was in heaven. But of course, I quickly realized that I'm just in Hong Kong. AKA Dim Sum Heaven. 6 stars by US standard, 4.5 stars by Hong Kong standard. Fortunately (and perhaps surprisingly), this isn't "just another pretty face". Similar to Mott 32, their menu is inspired by Cantonese style grill (and dim sum). They offer a similar (if not identical) IBERICO PORK PRESA CHA SIU, which his highly recommended. We also order the MINI LION'S HEAD, which was a succulent and tender take on a dim sum staple. The SEAWEED OKRA was perhaps one of the more surprising dishes in how light it was fried and how flavourful it remained. Finally, as many other reviewers from other sites have mentioned, the AUSTRALIAN WAGYU BEEF CHEEK IN WATERMELON CHILI SAUCE is a must try! The flavours and textures were, simply, amazing. A word of caution, it IS quite spicy, so buyer beware. Finally, to round things out, the service was impeccable - attentive and unobtrusive. (Most dim sum places in the US leave the black mushrooms out of the recipe because the good ones are expensive). The dumplings were smooth and tender, and without a trace of chemical tenderizers commonly used by most dim sum restaurants. This is as good as it gets! Other staples were also amazing. Har gows were fresh, crispy and juicy. The rice noodles were so perfectly thin that they were translucent. Bean curb wraps were super yummy. Beef balls were on point, moist and flavorful, and sans the taste of tenderizer. The XLB's were good but unimpressive, but that's probably because we just had those at Wu Kong the day before. Every item was freshly steamed and served piping hot - so fresh and so hot that the steam messed up my camera lens and I had to wait for the steam to dissipate before taking my pictures. (Note: While carts are still a gimmick in parts of the US, it has been pretty much extinct in HK and many parts of Asia for decades). Other than dim sums, we also ordered a BBQ pork and roasted pork plate, which was delicious, and light on soy sauces and artificial flavorings. The delicate Chinese almond pig lung soup was absolutely refreshing and nutritious (yes, it was made with real pig lungs, which were separated from the broth and served separately in a dish). This was one of the higher-end restaurants and it was definitely quite expensive, depending on what you order. Including the above expensive items and about 16 - 18 dishes of dim sums, the bill for a lunch for 4 came to HK$1,200 (approximately US$150). It's worth every single penny. After I asked for a glass of water because the food was so greasy, the two employees at the ordering counter started making comments about us instead of simply helping. Our table was right next to the counter, so we could hear everything they were saying. It honestly felt intentional, as if they wanted us to hear them. I've never experienced something so rude over such a simple request. What makes it even worse is that they charge a service fee. I'm perfectly fine paying for good service, but if you can't even bring a customer a glass of water, what exactly is that service charge for? Taking orders and bringing food to the table is just the bare minimum. To top it off, after finally getting a table, we were told to go wait by the entrance again. The whole experience was disorganized and frustrating. Overall, this place is incredibly overrated.
