The pretense is non-existent and locals (including myself!) seem to love it here. So like many noodle spots in HK, this place is fairly small. No big tables for 5+ but quite a few small'ish round tables that are good for solo eats or the invaluable food companion. The aroma coming from the semi-open kitchen should be enough inspiration for folks to know what they want upon arrival, but just in case they have the menus outlined along the wall. An easy way to start? Try a wonton and beef brisket with your choice of noodles. The wontons are somewhat pillowy in texture and full of flavor while the beef brisket is braised well while maintaining a perfectly chewy bite. The noodle variety is good, with egg / rice noodles winning over the crowd though I feel the e-fu noodles take the cake. Lastly, do not sleep on the beef tendon. It's practically butter when done right. Chui Hing does fancy itself as a HK style cafe, so other dishes like congee, fried fish skin, fried rice, may appear on the menu, focus on what to stack in your bowl instead. The prices are also very reasonable. I bought beef ball and wonton, wonton noodle soup. I didn't ask to have the noodles separate, but they still retained a good amount of chew by the time I got back up top the hotel. You can pay a little extra anywhere to ask them pack separate. The wontons are ok, beef balls are good, noodles are good, soup okay. The milk tea wasn't very strong but has a nice authentic back flavor. Everything was ready in under 5 minutes. Very good for takeout!

Apart from the typical name, there is nothing typical about their rendition on classic noodle soups like wonton and or beef brisket noodles. In fact, I dig it so much I tend to get both. At the same time. My go to combo of beef brisket and wontons have been an easy choice practically each time. The consistency of the tasty broth, as well as the tenderness of the brisket makes this a popular choice for virtually all patrons. A dash of hot oil and some scallions make this a fun late night bowl of goodness as well, though I tend to come here more often than not for a solid work lunch. While beef brisket and wonton is my personal favorite, just about any combination can be had here. I've seen people order ones with hard boiled tea eggs (茶蛋) and blood cubes (豬紅) or radish (蘿蔔) in the soup pile. At some point the noodles become overlooked, so instead of traditional wonton egg noodles, I try to see if they'll get me yee noodles or lo mein. Of the two locations in CWB, this one seems to be less crowded. Their sister spot on Sugar Street is also really popular, but I prefer coming here because I will always get a table at any time. They're both equally dingy but worth the visit for a reasonably priced meal. The service isn't much to rave about, but then again, there aren't many noodle spots that are. It's strictly cash only and better as a solo meal than a group outing.

We didn't go crazy trying to get a taste of almost all the fancy flavors though and stuck with the classic signature pork sheng jian bao. The others are worth a try but not a huge value add. I love that the skin is just thick enough to not pop when you touch, but thick enough to get that super crispy bottom. I've had enough of these things to know what I like, and to me these are the best I've had. Also, I'm glad I've finally gotten a hang of eating these things without having a soup explosion every time I bite into one. Like most of the smaller food spots around here, don't expect them to be pretty, but they make a good effort at keeping the place clean and stocking napkins for those boiling hot soup explosions.

Service was below average; the woman at the counter was quite rude. I'm accustomed to efficient, no nonsense service, but she was actively rude to me and my mother for no apparent reason. She was rude both before and after we ordered anything, as if we were bothering her by asking her whether we should order at the counter or what, and later whether the order she put on the counter was ours (speaking in Chinese both times). I really don't get it.

How am I picking up on these flavours when I can't even feel my tongue? How am I suddenly able to not just tolerate...but ENJOY spicy food? There's only one word for it: magic. And all of this can be YOURS for a shockingly low price of HKD $110! That's what a 4 person set + one lunch set cost for each of the 5 of us. The 4-person set itself was more than enough food for 5 of us, and I had leftovers to take home for dinner. See, the Dan Dan Noodles included in the set doesn't mean one noodle dish to share, it's 1 bowl for every person in the set! 4 bowls of spicy, flavourful, chewy noodles! On top of that, there was: Jellyfish and Cucumber: To cool down your palette. 3 Layer Pork: Some weird chilled pork roll with a spicy/sour sauce and a mound of garlic...something in the middle (puree?) Don't let the notion of spicy/sour/garlicky/cold pork rolls turn you off. This was pretty good. Spicy Boiled Fish: The visual representation of Sichuan cuisine: a giant pot of chilies, oils, and spices. Submerged in all that red are pieces of flaky white fish, flat rice noodles, and veggies. Good, but damn, this left my tongue swollen and made me a mouth breather. Wontons: This was loaded in the peppercorns and their oils, which means one bite renders your tongue numb. The second bite makes you appreciate pork in a whole new way. The flavours were so intense. This was definitely one of my favourites. Kung Pao Chicken: I'm not sure what this was, but it wasn't Kung Pao Chicken. It had chickens, cashews, and was way too saucy to be a traditional Kung Pao. The sauce was sweet, spicy, and sour. The cashews had a hint of a spice I can't really put my finger on...cinnamon? Still, very delicious, and something unique. Fried Pork Cutlet Noodle/Century Egg and Tofu: This is the additional solo lunch set we ordered. The pork was marinated in Chinese rice wine, and it was a fantastically strong flavour. Century Egg and tofu made another great palette cleanser. They've got the AC jacked up high but the weird thing with this kinda spicy food is that it doesn't really warm you up. You just feel your mouth burning while your arms are cold. At least when you're in a state of conflicting temperatures, you can relax on their super comfy pillows. All I know is that after the meal, my mouth was on fire, my nose was running, and I was sweating profusely. Never felt better. (55/100) - 2017
