If you prefer your ramen more plain, get the original tonkotsu. Both did not disappoint. I just wish they had a location in California. Their only U.S. location is in Seattle, Washington.

It's been a few shots now and for the most part, I've been content with all I've sampled. Ippudo might be in a household name in Asia, but the HK version certainly has its own specialties in what seems like a regionalized menu. There were a number of things I've never seen in NY or Japan but I suppose that's the beauty in visiting other franchise locations right? If only all global brands had this much variety. The prices are still $$$, but it's nice enough in here where people will still come rolling in. Firstly, the lobster ramen? This is likely seasonal and even a little weird. The lobster meat is tasty and while the presentation is on point, the broth does not complement the lobster at all. By retaining the shell, it forces the diner to eat both separately (i.e. removing the lobster and eating the noodles). Awkward sure, but HK'ers will definitely bite. Gone are also the hirata pork buns that have garnered a lot of fanfare and in their place, a vastly wimpier charsiu version that is a tad disappointing. They also have a happy hour that includes various skewers / izakaya pieces at discounted prices, along with frozen beer and a number of other items I've not seen in Ippudo before (scotch eggs anyone?). Someone tell the chef to relax on the chives for the gyoza ... they were practically buried in green. I still wouldn't put it past Ippudo to showcase some quality meals. The decor here is modern, the interior is clean, and the place is large enough to accommodate all kinds of party sizes. There is still the semi-cheesy Japanese welcomes from the staff, but I've actually encountered quite a few actual Japanese folks working here. And I've also seen a few of the HK'ers sleeping in the back room. Ippudo Corp: Your employees need a break.

Very quick and convenient, get a card when you enter, load it up witg whatever you order and then pay as you leave. While we waited, we see a big cloth hanging that tells you the restaurant is from Japan's Michelin Recommended Takano. The kids meal was the most impressive. They ate well that night! The Aguni Island Salt Ramen we ordered was full of flavor and quality ingredients - the staff said this was the ramen with the lighter broth. Finally the Tsukemen that arrived last was just OK to us. The ramen was much thicker, and served slightly cold; best part of the dish was the dipping soup which had tasty protein in it, but I would stick to getting their ramen in the future. Apparently all their ramen are handmade. The service was slow so be ready for that. The kids meals came out first and the adult's ramen came 10-15min later and we were so hungry the adults started eating off the kids' plates. The Tsukemen took so long to come out I had to follow up with the staff if they've forgotten the order, but they hadn't... it just took that long.

This Butao in the Sha Tin location is nestled right next to Din Tai Fung (a one-star Michelin…read morerestaurant) yet still manages to attract a waiting line of equal length. If that's no indication of how good the place is, perhaps the food will be a better one; I ordered the squid-ink ramen and was utterly beyond satisfied. The order form they have you fill out is laden with customisation options, so the broth comes as rich as you want it to be and same goes for noodle firmness, spice level and condiments. I went for a rich broth with normal firmness on the noodles. The broth definitely has a dominant squid-ink taste yet it's well-balanced with a robust creaminess. The pork belly was tender and succulent and ordering extra noodles makes it even easier to finish the rest of the broth. I would most definitely recommend a visit to Butao! P.S: the seating can be rather limited at times so expect to be sat close next to strangers.

Following tradition customers are seated in front of the "kitchen" in a long table, menu is limit to ramen only and there are only a few choices on broth. The Black Garlic Oil Ramen (pork broth, 1 slice Japs BBQ pork, and 2 slices of Nori) we ordered were as usual as anyone would get from any ramen shops in true ramen store. Broth was rich and thick (a little too salty to my taste), noodle was good (a little over cooked to my liking). And the chef does take heart of his product that he asks every customer of their opinion. Final word, I have had better ramen for the price they charge, and that's why it's only a 3-star. Good luck to the chef in this highly competitive ramen market, it's very tough.
