I've been to Ecuador and was feeling nostalgic. However, this place transcends a country. It is next level cuisine. I don't eat a lot of pork, so I ordered the ceviche. Though I was skeptical that you could get good ceviche in South Dakota as I usually don't even like fresh ceviche on the ocean. I literally have no idea how she managed to pull off this dish, but it is the best ceviche I have ever had. Truly delicious. I even drank down the broth, which didn't taste a bit fishy. Just full of lime and flavor. It's worth a detour to stop at this food truck. It's that good. Reasonable price, fast service. Not to be missed.
