Unfortunately, that changed quickly when I saw an employee loading the tomatoes and lettuce into the aluminum serving tins with her bare hands, directly scooping from a larger plastic storage bin. No gloves, no utensils. Just bare hands fully in the food. That's unsanitary and violates Vermont health code (§3-301.11), which prohibits bare-hand contact with ready-to-eat food.
