I visited Wild Waylon's BBQ as part of my effort to get a hot dog in every county and incorporated city in Virginia. Wild Waylon's was my Stafford County stop. First of all the amazing bbq smell hits you as soon as you leave the car and there are few better greetings than that. When we arrived around 11:45 on a Sunday there was a line of folks. Best I can tell, they had gotten a little behind putting together a large catering/to-go order. The line moved quickly was they were focused on us. The folks behind the counter were friendly and welcoming. We got their smoked dogs, with a side of pimento cheese mac and cheese and I tried their smoked devil eggs too. We sat on the ice cream side of the restaurant as they got our lunch ready. When our dogs hit the table there was an immediate and simultaneous, "Wowwwwww!" from us. I mean, just look at that picture. These were MONSTER wieners in big, toasted, split top buns. The slaw was flavorful and crunchy, the mustard BBQ was the ideal flavor profile. We were in heaven. The pimento mac and cheese - a delight. SO creamy with actual flavor (rare for restaurant mac and cheese unfortunately). The deviled eggs were good but I don't know they they were anything special. This was such a great spot. I'm really looking forward to returning. read more

Made another trip to Wild Waylon's. This time we had the brisket sandwiches, coleslaw and baked beans. We made a detour on our way home on 95. This place is worth the drive. I'd go again just for the baked beans! Service is great and folks are so friendly there. Portions are very large and you get a lot of food for your money. read more

Was visiting the growing city of Fredericksburg when I smelled a hint of smoke bbq...wasn't really sure what to expect as this could be a bait and switch...I quickly looked up Wild Waylon on Yelp and reviews were mixed but fairly positive....not much of a smoke smell inside the establishment but plenty of bbq sauces on the table to give off a decent bbq vibe. I decided to go with the smoked brisket and smoked hot dog...presentation was great but not a big fan of weighing bbq at the register but if that's your process, I get it....brisket was mid...looked re heated but lacked authentic smoke flavor...not sure if they use a true smoker or a variation of a pellet smoker/indoor smoker...it's on the same line as mission bbq...not bad but not winning a contest. Brisket prep is a hard skill to master...it depends on the person...some may prefer point of flat...try is particular brisket lacked flavor, there was a hint of smoke but not much else...brisket is a solid 7 out of 10.... Smoked Hot dog is winner...down to the bread, presentation and most important...Cole slaw. Does the hot dog give off a rich Smokey flavor....not really...is it worth the price...you bet. So how does this place receive a 4?....great customer service, clean establishment, plenty of sauce options, and let's face it...bbq is a hard business but most importantly it's one of those things that's cooked and prepared differently all over the world...give WWB a try and come up with your own conclusion read more

SOLID hole in the wall BBQ joint the way like it! Menu options can be different daily and meat is there until sold out which means it's FRESH DAILY! Oh, my, law. Run, don't walk, here on the weekends. Why? Because they only do their beef ribs on Sat/Sun and IT IS SO WORTH IT. Also, the owner is amazing. He was delightful to talk to about the menu and honestly gave such a great vibe to the eatery. Before today is say we haven't been all that impressed with BBQ options on the east coast. There's one other place that was alright but Wild Waylon's BBQ knocks it out of the park. And if I'm being frank, Wild Waylon's is better than some BBQ joints I've been to in Texas. We will have to make the trek out here again, and this time with friends, to enjoy one of the best restaurants in VA. What we got: Jalapeno pepper poppers - 5* what a delicious side! Until today is yet to meet a restaurant that made a better jalapeno popper than myself. Wild Waylon's has officially won the unofficial competition. I will be putting rubs on my bacon henceforth and hopefully will be able to reclaim my honor. Do yourself a solid and order this side. Beef rib - 5* my partner missed my face when I took my first bite and that's probably a good thing. This was the highlight of the meats Wild Waylon has to offer. If I remember correctly it's smoked for 24 hrs and boy does it shine! The meat literally fell off the bone when I picked it up for my first bite but that didn't stop me from diving in with my fingers. This one does not need any sauces, it's flavour is strong and good. Baby back ribs - 3.5* honestly, probably closer to 4 but when compared to the beef rib no other rib can compare! What I loved about this one was the crispy-ness on the underside of the rib and dipping this one in the various homemade sauces that are available in store. Pork Belly - 3.5* we tried a slice but saved the rest for leftovers. It was good and even better dipped in a sauce. I really liked the texture and am looking forward to eating the leftovers. Much like the ribs I think I am having a hard time judging this one without comparing it to the beef rib. Brisket - 3.5* we tried a slice but saved the rest for leftovers. It was decent and kind of melted in the mouth. There's probably a little room for improvement with this particular dish but it's also a good one to let the sauces shine. Baked beans - 5* woooah, these are fantastic beans! Coleslaw - 3* decent coleslaw. It wasn't anything amazing but we appreciated having it as a palate cleanser between meats and spicy sauces. Pickled jalapenos and onions - 3.5* this is spicy and delicious! read more

I drove into a strip mall with Giant Foods and on the other end was what I thought was a pizza joint but turns to be a different restaurant called Wild Waylon's BBQ. I was curious so I went in for lunch. Before you walk in, there's a smoker with a stack of wood on the left in the parking lot. As you walk in, you're greeted with smiles and a warm welcome. Their menu is on the wall with all sorts of options from proteins, sandwiches, sides and dessert is display next to the cashier. The dining area is limited but manageable. Each table has paper towels and 8 bottles of variety of homemade sauces. I order 6 items: 1) Smoked Devil Eggs 2) Smoked Chicken Wings 3) Pit Beef Sandwich 4) Smoke Hot Dog 5) Special of the Day 6) Ginger Ale. I loved deviled eggs so I was excited about it. But when I popped in my mouth, hmmm, it was bland but maybe because it was smoked. I don't know, I sprinkled some salt that was on the table and it was a little better. The smoked hot dog was unique, the casing had a nice snap served with mustard and topped with a purple slaw. The first bite was good but the second bite was way better because with the slaw, I couldn't get enough of it. The special of the day was a loaded potato. It was topped with cheese, bacon, green onions, and some sort of butter cream sauce. You will need a knife and fork for this and with just one bite, you will be hooked. The combination of all components works great together. It was delicious, very heavy and it's a meal on its own. It's definitely a must get item. The smoked chicken wings and pit beef sandwich was dry for me. I was looking forward to both items because I never smoked wings before but unfortunately from the exterior to the interior of the wings, it was too dry even dipping into the ranch that was provided. The pit beef sandwich is a smoked roast beef topped with thinly sliced onions and homemade horseradish. So I took a bite before adding any flavor sauces, just to taste the meat on its own. I don't know if it was due to the layers of the roast beef but it was dry and bland even with the horseradish. I was expecting the horseradish to have a little kick but it didn't. So I choose two of the sauces - honey bbq and sweet heat. After adding the sauces and I wanted it to taste good but the meat was still dry. I wash it down with the ginger ale that had cane sugar in it. Never had it before and looking forward to it and unfortunately there was no flavor. Because it was made with cane sugar I don't know what it's supposed to taste like. There were two extra items that are a MUST get! One was their beans, jalapeños and pulled pork served as a side dish. The other one is their pecan chocolate pie. Those two were absolutely amazingly delicious. OMGOSH!! I am still thinking about them. This is a family owned business which provided great customer service, very attentive, friendly and very knowledgeable. The restaurant is clean and they are planning to open an ice cream parlor right next door. When you have the chance, come check them out. read more

We found this place in our travels between Colonial Beach and WV when we were craving some BBQ and have returned several times. Every menu item we have tried is fabulous and they owners/staff are amazing people. Had an "oh no" moment when we realized last minute we need to feed a small gathering and Molly was so kind, patient, and accommodating with my order. Looking forward to another fantastic meal from Wild Waylon's! read more

After reading some really good reviews about Wild Waylon's we stopped in for lunch on a Sunday. The day we went they had a couple of specials; their beef ribs, which they have on weekends and their Nashville Hot Smoked Crab Cake Sandwich. The ribs were outstanding! Perfectly smoked and tender, with so much of the fat being rendered, but far from being dry. They're the classic, Texas style dino ribs! That Nashville Hot Smoked Crab Cake Sandwich was very interesting and tasty! Definitely a large, filling sandwich and highly recommended if you see it on the menu. I tried their sausage and it was decent. Their sides were pretty good, with their jalapeño popper being incredible! The bacon had an amazing seasoning and the smoke on them was so nice. Their baked beans were really filling and tasty, loaded with meat and nicely seasoned. They had several different sauces to choose from, some spicy ones, such as their hot vinegar style. The restaurant's dining room had about 8 tables in it and got busy pretty quickly around lunch time. Service was excellent and very friendly. We'll most definitely return! read more

Hmm. Not up to the reviews and the hype. Watch the weights: 1/2 lb of ribs at $20/lb should some to $10 but they charged me $19. Kind staff but ribs were fattier and wetter than I like. I asked for the leaner brisket but the slices I got were like fatty pudding. Wide, generous selection of sauces were flavorful and welcome. The sides I got (Beans and slaw) were ok. Place was a bit grungy. All in all too much $$ for the quality. read more

Ordered the pulled pork and brisket last weekend, we arrived right after they opened since it was a holiday weekend. The brisket was at least 30 percent pure fat, and the bark had an unpleasant burned fuel aftertaste. The pulled pork was ok, but nothing special. Disappointed. read more

As someone who's been smoking brisket, pork butts, and ribs for 7+ years, I don't hand out BBQ praise lightly. I judge every spot against what I'm putting out at home... and a lot of places fall short -- whether it's weak seasoning, lack of smoke, or just flat-out underwhelming flavor. But Wild Waylon's BBQ? Yeah... this place is LEGIT. We went all in: pulled pork, brisket, and the big dino beef ribs -- plus mac and cheese, green beans, a bacon-wrapped jalapeño popper, and the jalapeño cornbread. Every single thing delivered. The brisket had great flavor and was cooked right, the pulled pork was juicy and well-seasoned, and those beef ribs... absolute showstopper. Big, meaty, packed with flavor, and done exactly how you'd want them. Sides were just as solid. The mac and cheese was rich and satisfying, green beans had great flavor, and that bacon-wrapped jalapeño popper + jalapeño cornbread combo? Yeah... ridiculous in the best way. And the smoke -- you can actually taste it. That alone separates them from a lot of spots. The whole experience was on point too. The big pit out front lets you know immediately they're serious about their craft, and the staff was friendly, welcoming, and genuinely helpful the entire time. Prices are also very reasonable for the quality you're getting. This is one of the few places I've been where I walk away thinking, "yeah... they're doing it right." If you're anywhere near Fredericksburg -- or even just passing through -- this spot is absolutely worth the stop. read more

From the greeting at entering the door to leaving the service was like I was family. We had the brisket sandwich, pasta salad and the pit beef sandwich. The pit beef sandwich was so full I had to take meat from the sandwich to get it in my mouth. The brisket was moist and perfectly smoke flavored. My wife rarely finishes a sandwich that big but devoured this one. The pickled jalapeños added the heat I was looking for. When I offered to tip for the service and great food it was politely declined so we got jalapeño corn bread and a Tshirt to go. Glad we made the stop! read more

BLUF: great food and I will be back. In the far corner of the strip mall by the ABC store and the "old-new Giant". When you walk in the smoke grabs a you and lets you know you are in a real BBQ joint. The furniture suits and I do like the tables available outside. A brisket sandwich was being prepared and it looked great. (Almost made me change my mind). Had the pulled pork and deviled eggs to go. The sandwich was fantastic and piled high. The meat had a great flavor without any additional sauce. I did try the mustard vinegar and the hot vinegar both were fantastic. read more

This is a small family business which makes you feel welcome and provides service with a warm smile. The owner comes over to each table to make sure that you are happy with every meal. You could not have an atmosphere that is more delightful. The restaurant is small so you have to be patient to make sure you get a table, but there is a big take-out business. Hmmm, what about the food? I have been searching for a large, juicy, delicious rib in the North and South since visiting Texas twenty years ago to no avail. I am constantly disappointed, but NO more!!! These beef ribs, which are only served on the weekend, are heavenly. I only wish they were closer to my home so I could stop by casually every weekend for a quick meal. Have I said the ribs are perfect? Our friend had a pulled pork sandwich and she was also delighted. She and my husband also tried a hot dog, baked beans, chili, the corn bread, and potato salad. Everything was so special and tasted homemade. If you like ribs and cooking that feels like home, this is the place for you. read more

We stumbled upon this place while searching for a BBQ spot after our 5K, and it absolutely hit the spot! We had big appetites--my friend was craving some really good mac and cheese, and I was on the hunt for brisket. Luckily, this place had both, and they did not disappoint. We walked in not knowing what to expect, and we're so glad we gave it a shot. I had the brisket sandwich, and my friend got the pulled pork sandwich with a side of mac and cheese. The food was incredible--perfectly cooked, flavorful, and satisfying. The mac and cheese was over the top good, creamy and cheesy with that homemade feel. I can only imagine how great the rest of the menu must be. The customer service was immaculate--you could tell they genuinely care and have a lot of loyal, returning customers. It's a bit of a drive from where I live, but totally worth it. I'll definitely be back! read more

As another customer noted: 4.8 out of 5? The other .2 are liars!! FANTASTIC BBQ!! Super friendly, awesome food, great service!!

FREDERICKSBURG - The missus leaned in to take the first bite of her brisket sandwich ($14) and a hunk of brisket the size of an iPhone fell out, onto her tray. The remaining sandwich still was this tower of tender beef brisket. It was then we knew, this place gots the meats. Went on a January Saturday afternoon. It's in a strip mall storefront - clean, tons of parking, Staff crazily friendly. I got the smoked turkey sandwich ($13) - again, a seriously large amount of meat piled high. We got small sides of pimento Mac and cheese and deviled potato salad - each $4. The pimento Mac made my wife happier than I ever have in our years of marriage. The potato salad's good. The smoked brisket chili ($6 small serving) is, like the sandwiches, a meatapalooza - essentially just a mound of brisket in a cup in a smoky chili sauce. Comes with what felt like a 3-lb. slab of very moist very dense jalapeño cornbread that we both enjoyed. Missus ate maybe a third of her sandwich, packed the rest. I took home almost all the chili and about half the two sides. You get a lot of food here. If we have any beefs, it's that there doesn't seem to be any platter option where I can get, for example, some pulled pork and some brisket. It's basically a takeout place at which you can eat in. If you eat there, you're using those flimsy plastic picnic forks and knives that come in a sealed plastic pouch. But you get a lot of food, done well, and it's not some chain. 4.33-Star experience, definitely will return next time in Fredericksburg area. read more
