What an amazing find in Bright! We were in town for the weekend to see the autumn leaves and I popped online to see if there were any vegan options in town. I wasn't expecting much, so I was quite surprised to find that Bright is home to What You Eat, an all-vegetarian cafe with heaps of vegan options.
When we walked in, I knew right away I would like the place. It has a light, airy, cheerful atmosphere, and the place was packed so I knew the food would be good.
I splurged. I had a liquid gold turmeric latte, the vegan schnitzel parmigiana (made with Bio-Cheese), and a vegan cookie for dessert. My boyfriend had the house-made vegetable and barley broth with garlic toast. Both of our mains were on the "lunch specials" menu and not on the regular menu, so I'm not sure how often you can actually order them, but both were DELICIOUS. My parma was easily the best vegan parma I've ever had (much better than the one at the Cornish Arms in Melbourne), and my boyfriend's barley and veggie soup was really hearty and tasty as well.
Price-wise, it did seem a little on the expensive side, but given this is a country town and ingredients like Bio-cheese are not readily available, I can understand the pricing.
Service was super-friendly even though the place was packed for the autumn festival.
