We had no idea what we were in for ...wow!! We ordered separate bbq brisket (not as a sandwich, we wanted to focus on the meat) and a side of Mac and cheese and bbq beans. Wow, the brisket was the best bbq brisket I had eaten anywhere. Until today, the best I had eaten was in Texas and in Maine. It was so moist, flavorful, rich melt in your mouth brisket deliciousness ... with a perfectly paired horseradish bbq sauce on the side. Everything is clearly homemade with lots of experience and love...A heavenly brisket for sure!! The bbq beans with a variety of beans and chunks of beef that was also absolutely delicious and a standalone meal ... best beans anywhere with regard to flavor, spice, bean variety, texture and sauce ratio. And finally, the Mac and cheese was perfect, not too salty and more like the Jamaican macaroni pie ... crispy on the outside, great cheese quality, and perfectly salted wothoit being greasy. It paired perfectly with the flavorful moist meat and beans!! I returned to share my gratitude to the incredible chef du jour, Freddie. I really love and will travel for good bbq and this is as good as it gets!! No wonder it's award winning. And chef Fred is also a full time firefighter, father of you can imagine, and a lovely kind down to earth person, as is his partner, Jeff!! Thanks for your hospitality! Definitely we will be returning here often! I make a mean braised brisket (grandmother's recipe) but bbq brisket is tough to make and keep moist! They nailed it!! We love the ambience/ location at the Williamstown Amish market entrance ... and worth following this award winning chef and good truck to other locations!

Only negative is that Fred has a day job (yes - as a fireman - LOL) ... so we have to wait to see where his awesome truck will be and get there early before he runs out! Even though I am a Louis Prima fan (sorry for the obscure reference) the bone to meat ratio just doesn't make up for the higher fat content. At least for me. This guys ribs changed that. You don't eat these ribs so much as you hold them up and allow the meat to dive into your mouth like an Olympian off the 10 meter platform. They are that good. And I have eaten enough brisket in my life that writing a review including a reference to pork is probably something I shouldn't do publicly, but his is top notch. Lastly, I come on this site and often see reviews regarding the personal nature of the proprietor of the business, which are sometimes so vicious and misplaced, it is not a mystery why the writers of South Park want to feed some of the members of this site what they want to feed them. To that end, if you have a problem with either Dan or his staff, I would have to say that the problem is most likely with you. They couldn't be nicer, more courteous and helpful. I know that sounds like a lot for serving somebody BBQ but those fairgrounds on a weekend can be a certified nuthouse. At no time did I see anyone lose their patience or desire to help the customers. Five stars all the way.

It had to be just right. I've worked in the restaurant/events/hospitality industry for over 15 years and have worked with lots of different chefs and eaten lots of different foods. My entire family and I love to cook and love to entertain, and lots of guests of our wedding are in the industry too. We chose Fork in the Road for their flexibility, amazing ideas, and mouth-watering sounding menu. While we were super psyched about what we chose, FITR far exceeded our expectations and made our wedding even better than we had imagined it could ever be. The truck is not just grilled cheese and fried foods (although they make delicious sandwiches and other amazing bites too!). Truly, Scott is incredible. He worked with us to create our dream menu, and the result was drool-worthy perfection. We did a regular cocktail hour with butlered hors d'oeuvres, a family-style dinner service, and butlered mini deserts. From the mini lobster rolls to the truffle parm fries, the apple-cider mustard BBQ braised short ribs to the duck confit - every single thing Scott came up with or we asked for was spectacular. Everything was full of flavor and executed so well - and all out of food truck and cook trailer! Scott's team of chefs, his hired waitstaff, his family - everyone was awesome. Our friends and family are still raving about everything. Endless repeat comments of not just the best food they've had at a wedding, but some of the best food they've had, EVER.
