Thank you VPN Americas!

I just attended the 3 day course with my Friend and winemaker Scott. my wife and I are planning B&B in an agritourism setting on our small Gamay Noir vineyard. Having a Valoriani wood fired oven on property, I was not getting the results looking for in a Neopalitan style pizza. Peppe and assistant Jamie were fantastic at teaching us the products, preparation and execution that "wowed" our eyes and tastebuds. I really loved that we worked with 5 flours (denti) was my favorit and several types of San Marzano DOP tomatoes. Seeing how the pizzas and calzones turned out test driving the varying products was great! one of the highlights (so many) was the mozzarella ball.making from the Grande brand curds...so fresh! It's amazing how the simplicity of the Marinara and Margherita is so much more in terms of satisfaction in taste. UPS has been busy delivering dough and tomato products and we continue the inventory to carry on the practice that Peppe at the VPN instilled in us! Thank you VPN team!

Instructor is one of the friendliest people you would meet with a passion for teaching.

I had a great day attending the Basic course for 6hrs. Peppe Miele is a great instructor that carefully explains each step of the way. He give's you plenty of space to practice independently. If you are a pizza lover who is looking to better their art at home, this class will definately help you. Also want to add that they are very friendly and pleasant instructors whom strive to make connections with their community.

I did that!

This is the only place in America to learn how to make official authentic Neapolitan pizzas. After falling in love with the pizza in Naples many years ago, I could not wait until the day I had my own backyard wood-fired pizza oven. Well, that day came, but while the pizzas I made were good, okay better than good, they were not the Neapolitan pizzas I craved. So I discovered VPN and signed up for their one-day class. This isn't a watch and learn kind of class. This is a get your hands in the dough, press the tomatoes, cut the cheese (pun intended), and throw it in the fire kind of class. Peppe Miele is a pizza legend (look him up). He shows explains everything with great detail in an easy to understand way. Then he steps aside and turns the kitchen over to you. With his great feedback, I'm ready to up my backyard pizza game! I left with extra pizzas, dough ready to make more, and supplies to make even more! They even have a store to buy authentic Neapolitan pizza making gear. I will be back!

This is the place to learn everything about Napolitano Pizza. From the moment you enter the place you feel you are in Naples. Everything athletic. The teacher was very friendly and knowledgeable. We really enjoyed getting this experience.

Peppe and two grateful students with celiac disease.

My daughter and I took a gluten free pizza class with Peppe at this wonderful cooking school. The experience was definitely worth the cost of the class for two people with celiac disease who have few safe options. Peppe was an entertaining instructor with so much knowledge to share. You will not regret taking this fabulous class!

My first pizza napoletana, with teaching by Peppe!

Highly recommend the basic course, a "must do" for anyone that has serious interest in making authentic Pizza Napoletana. What an amazing opportunity to learn, hands-on, the technique from the best, Master Pizzaiolo "Peppe". Peppe was not only as knowledgeable as anyone in the world, he was patient with a new pizzaiolo like me, allowing me space to make some mistakes and learn along the way. I also gained a strong understanding of the rich history of pizza with Donato which was very helpful. This course has given me a solid foundation to begin my pizza making journey. Grazie Mille Peppe & Donato!

Getting it right is important to me. After years of fumbling with Neapolitan pizza, I decided to follow the training of VPN Americas to become a real pizza chef! With them, you will have the opportunity to learn not only how to make excellent Napolitain pizza, but also all that revolves around this art that dates back several centuries. Pepe is a passionate, meticulous and attentive individual. His knowledge is immense and it is a privilege to learn with him. I crossed the entire continent to come here. I learned there a knowledge which will accompany me for a lifetime. Thanks to Pepe and his staff. À mes compatriotes Canadiens et Québecois, je vous recommande fortement cette école, la seule du genre en Amérique. Vous y apprendrez un savoir incroyable et ferez de Pepe votre ami pour la vie. Stéphane

Home grown fresh tomatoes right outside the school. Delicious. Grown by the one and only Pepe Miele.

Ask the Community - VPN Americas

Do you offer classes for kids?

Yes we do class for kids we just did one for Alexandria School for about 15 kids age 7 to 12

Is the 1-day Basic Course for a wood-fired pizza oven? Or a standard convection oven? The training says it's for "at home", but doesn't say anything about the type of oven. I know convection ovens don't get hot enough though. Thanks!

The 1-day course uses only wood fired ovens and teaches traditional Neapolitan pizza. You could probably adapt to a regular oven but it would never be quite the same as it the oven wouldn't get as hot.

I somehow expected this to be an indoor event, so staying "inside" was fine with me. We tried our first plate of couscous served with your choice of vegetable, chicken and/or beef (cheek?). Each item came with its own broth over the couscous. Vegetable was my favorite one. Besides from couscous, there were other items that Chef Farid Zadi and his team served that consisted of goat and rabbit meat. But the MUST have was the BRIK. It was the best thing I ate from this festival. It was OMG good~ I regretted not getting 2 the first time I ordered because by the time I wanted another one, the line was just too long. Each brik was prepared carefully in front of us (that's why it took a long time to order). It was prepared with a thin flour sheet called warka then the chef added shrimps (marinated with lemon/lime juice) + cilantro/parsley + harissa (a chili paste) + a whole egg (each cracked right in front of us). The chef then wrapped it loosely and then fried it... the end result = a crispy + fluffy layered of some darn good stuff called the BRIK.

Todays class was "A hands-on cooking class of easy and healthy stir fry and sushi recipes the whole family will love." The class size was small and there were enough work stations for every child to try to make something different. The work stations included: Farmers Market Rainbow Stir-fry Thai-riffic Chicken Pasta and Veggie Stir Fry Cucumber and Avocado Sushi Mexican Sushi Bites Crispy Candy Sushi Moo Shu Vegetable Roasted Color flower Sun Tea My daughter was only interested in making sushi everything and we were successful in working the three stations that made sushi. After the class was finished making the dishes, all of it was laid out buffet style for us to try everyone's handy work. Chinese take out boxes were provided for taking home what we made. The food itself wasn't "fine cuisine" but the class was very informative, fun and provided a great opportunity for kids to try a food they typically wouldn't try at home or even at a restaurant. Even though, I consider myself a foodie and a well-informed cook, I did learn something new from the class and it was simple enough that it got my nine year old daughter interested in cooking! We were also able to get all the recipes in a handy dandy stapled handout. I learned that Kidding Around the Kitchen provides weekly demo's Sunday's, 10-noon at the Hollywood/Atwater Farmers' Markets. I look forward to taking my daughter to the next class.
