Erik did a wonderful job sharpening my knives! Now, I'm not terribly rough on my knives and I take fairly good care of them, but mine needed some attention, so I decided to look for a local person who could bring some life back to them. Just picked up 4 old knives & an ancient pair of scissors & I'm very very happy. The crummy scissors that before could barely cut paper are freshly sharp enough to cut out fabric. I like nice things and I don't mind spending $$$ but I'm hard on stuff. This was the case for my Shun Knives. I had spent a ton of money only to abuse them. After three years, 4 apartments, daily use, stabbing frozen things, opening cardboard boxes, twice chipping the tip and most unforgivable - washing them in the dishwasher - my knives were a dull and haggard mess. I know I'm high impact and don't deserve my knives. But I really love these knives and wanted to seem them resurrected. Checked Yelp. Saw that for $10 Viking will pick up and deliver. They charge maybe $6 per knife as compared to my last guy in Chelsea Market. My knives were picked up on Tuesday, returned on Thursday. They are like NEW all for $45. Erik was able to fix the tip on both chipped knives, fixed a divot in the butcher knife and they are so sharp I actually broke skin already (Erik warned me). Just awesome. I had several knives that needed sharpening, including a chef's knife and varying sizes of paring knives. I could hardly slice a mushroom before the knifes were sharpened. Working with Erik is a very unique New York experience. A couple of text messages to set up the appointment. Then a meeting at his UWS apartment to drop off the knives. A couple of texts the next day and back to the UWS where Erik was waiting outside with my knives in a bag. I took them right home and tested them out -- mushrooms beware!! Erik did a great job. So we found Erik online. With great Yelp reviews. So we gave him a call, dropped off the knives, and the guy actually had them ready for pickup in 24 hours. And damn are they sharp. Put a great edge on the one Shun and did the same with the set of Henckels. And was, shockingly, even able to get a great edge on the cleaver, which is no carbon stainless. Service was excellent, the price was right and it was easy for me. I couldn't believe the difference in my knives and how sharp they are.
