Canadian Oysters
Alex P.

Hidden away subtly next to the well regarded L'Orygine restaurant is a place that takes things into a unique direction: using all Canadian ingredients to prepare finest cocktails and food. That means, no basic ingredients like citrus are used. That's basically telling the bartender they cannot make 99% of cocktails in mind and have to take risks to make something tasty happen. That concept in itself is a recipe to create things that will be genuinely and authentically Canadian. In other words, experimentation at its finest. Opened in 2024 by the team behind Quebec City's only 2 Michelin starred restaurant, Taniere, this is now the spot to be for those in the know. So, how is trial and error going of crafting something genuinely Canadian? Cocktails are superb on both taste and presentation. The food is remarkably plated with extremely high quality ingredients. Everything tastes excellent. If that's not enough, the entire interior looks like a very private club and the team of servers and bartenders is superb and welcoming.

Charcuterie board, vieux carrie
Francie M.

A speakeasy, with an outdoor deck?! Came here to rest my feet for an early dinner and drink. Unfortunately they were out of the drink that most caught my eye so I ordered the Vieux Carre, which was a spirit forward drink similar to a less sweet old fashioned. I also hadn't had a charcuterie board this trip yet, so splurged on one here. It came with three types of cheese, three types of meats, two types of pickled onions, traditional cucumber pickles, pumpkin seeds, cranberries, an onion puree, a mustard puree, and bread. First off, I appreciated they actually provided the appropriate bread-to-other ratio. I feel like normally you run out of bread while eating a board but I actually had bread leftover with this meal! The cheese and meat were good of course, but I want to make a special call out to the onion puree, which was like condensed French onion soup, and the cucumber pickles, which were some of the best pickles I've had because they tasted so fresh, like they had just been brined. All of this on a deck looking out towards the river. Stop by here after late afternoon cruise with Croisieres ML across the road to continue enjoying the river view! Logistics: - indoor and outdoor seating - limited street parking nearby - several complex mocktail options available. I wanted to try one so bad but I was too full for more!

Loved the lighting.

We had a party of 4 and waited about 45 minutes (we were not staying there and they prioritize guests first). Inside is moody and chic. Drink menu is so unique, each crafted with a story. Overall an amazing experience.

The hotel itself had also long been regarded as a must-see in Quebec City, though my friend and I found its lobby underwhelming. The bar, however, was in the back of the main floor and offered stunning views of the St. Lawrence River. We approached the host stand and asked if it would be possible to get a table for two on short notice and without a reservation. While we did not get seats with a view, we were thrilled to secure what seemed to be the lone remaining table. The room was cylinder in shape with a circular bar right in the center. The walls were either windows overlooking the River or bookcases of the classics. There were exposed lightbulbs hanging from the ceiling that provided the only real illumination in the dimly-lit bar. The place had a mix of industrial, rustic, and masculine vibes. It felt almost like a scientist's lair or a professor's library. Our server, Henry, was very refined, yet personable. He helped my friend navigate the mocktail list and ensure she was going to get a concoction that met her needs. Meanwhile, I loved perusing the cocktail list that explained the inspiration behind each of their custom beverages. I immediately selected the Apex, as it included many of my favorite ingredients. The martini had been inspired by The Great Gatsby and was composed of Bistro Vodka, ginger, a passion fruit and vanilla cordial, Suze, pineapple bitters, sesame, and prosecco. The bright yellow drink was topped with a hefty scoop of a ginger-lemongrass foam. The sesame, ginger, and lemongrass gave the drink an exotic, Asian flavor that was as delicious as it was unique. In addition to our drinks, the bar was nice enough to give each table a bowl of potato chips. The couple next to us was going through their snack fairly quickly, so, despite being full from dinner, I figured I needed to at least try a solitary chip. Sadly, they were just plain and nothing out of the ordinary, though they were a tasty rendition for sure. The 1608 Bar was a fun, intriguing, and gorgeous place. It certainly earned its spot of number 41 on Canada's 100 Best Bars list, for its creativity in particular. I would highly recommend grabbing a cocktail there, but I would suggest making a reservation first, as I think that we had just been lucky to get the last table.

I took the few steps up to the front desk where a host told me that the bar was first-come, first-serve, but that I could look for a spot. Thankfully, there was a stool open right in the middle, so I hopped up and made myself comfortable. The friendly server greeted me with a smile and handed me their vast menu, which included breakfast served until 2:00 pm, which sounded great to me at that moment. I started with a regular coffee, which was surprisingly bold and gave me the wake-up jolt that I needed to make it through another afternoon excursion and a busy evening. For my meal, I ordered the "Les deux œufs", which meant two eggs prepared however I wanted. I opted for scrambled egg whites, and despite forgetting to ask for them more on the well-done side, they were delivered as such. The fluffy whites were also very well-seasoned and flavorful. They were served with roasted Yukon Gold potatoes, which had been coated in an oil that had been infused with fresh garlic and parsley. They were definitely on the greasy side, but were otherwise fantastic. I also had the option to select some sort of breakfast meat or fruit, so I went with the latter, which turned out to be fresh blueberries and strawberries that were kissed with sweetness. Lastly, the accompanying toast was from a real artisan loaf, not a package. It was, honestly, all delicious. Plus, they managed to have all of the food out to me within thirty minutes, even with the crowd and without me asking for a rushed order. I just wished La Buchette was a little closer to home!

Nothing will come close to comparing! We heard good things about the hot chocolate here and wanted to check it out for ourselves after being out in the cold all day. We chose the spiced hot chocolate, as recommended by our server. It was absolutely delicious-- rich, flavorful, creamy, and everything that a hot chocolate should be. Although the price was a bit steep, we had enough for 4 small cups and it came with two scones and whipped cream on the side. We also got two "biscuits", which we thought were going to literal biscuits, but ended up being small pastries which were both tasty! We were lucky enough to snag the seats right next to the fireplace which ended up being the perfect way to spend an hour hanging out. We ended up coming back for a light dinner the same day and also really enjoyed our time. There was a live pianist performing which really elevated the dining experience. We started things off with some oysters, which honestly were some of the best I've had in a very long time. The dipping sauce was a bit strange and untraditional for me, but it was perfect with just a bit of lemon juice. We also got a burger to share, and when they accidentally brought out a side salad instead of the fries we requested, they let us keep the salad and brought a huge entire order of truffle fries for us (!!!) Canadians really have some of the best fries too because these were perfectly crispy and honestly didn't even need dipping sauce. The burger also didn't disappoint and was savory goodness. I wish we tried this place sooner! Would highly recommend, even if you're not staying at the hotel itself.
